Description
It’s hard to believe Dairy And Gluten Free Chickpea Cookie Dough is made with mostly chickpeas. You would never know with the peanut butter, brown sugar, vanilla and chocolate chips disguising it. With a real cookie dough texture you are in for a super tasty high protein treat. This is a recipe the whole family will enjoy and bring out the kid in all of them. Make this fun dessert in about 10 minutes or less.
Ingredients
Dairy And Gluten Free Chickpea Cookie Dough
- 1 (15 oz.) can Chickpeas, rinsed, drained and peeled
- 1/4 cup Organic Peanut Butter (or nut butter of choice)
- 5 Tbsp Brown Sugar or Coconut Sugar
- 1 1/2 tsp Vanilla Extract
- 1 1/2 tsp Coconut Oil, melted
- 1/8 tsp Sea Salt
- 1/4 tsp Baking Soda (this helps with the real cookie dough taste)
- 2 Tbsp Oat Flour or Coconut Flour
- 3 Tbsp Dairy Free Chocolate Chips
Instructions
Dairy And Gluten Free Chickpea Cookie Dough
- Rinse and drain the chickpeas. Take at least half of the skins off of the chickpeas or off of all of them. (optional) Just pinch the pointed end of the chickpea and the skin comes right off. This will help the dough to be smoother.
- Put the chickpeas into a food processor (I use Hamilton Beach Food Processor) with the peanut butter and vanilla extract. Blend and then stop to scrape the sides of the food processor, blend again and scrape the sides.
- Add the rest of the ingredients except the chocolate chips.
- Blend everything until it is very smooth. (about 2 minutes) Scrape sides as needed.
- Take the dough out of the food processor and into a bowl.
- Add the dairy free chocolate chips. If they are mini chocolate chips then just add them, but if they are larger chocolate chips, chop them up with a large sharp knife ( I use a Ninja Knife) Stir it all together.
- Ready to serve or put in the refrigerator to cool to get harder.
- Enjoy!
Notes
If you want to make the dough creamer just add more nut butter.
You can use almond flour instead of the oat flour, but you will need to add a little extra then what is called for in this recipe for a flour replacement.
