A Little History On Cookie Dough

To much of our surprise cookie dough was invented in Persia or better know to us as Iran today. This was because it was one of the first places that grew and harvested sugar cane. This dates back to early 7th Century AD. Cookies were actually created as a tester to test the oven to see how hot they were. I’m guessing there were a lot of burnt and under cooked cookies.

We all know how wonderful the dough is raw. As children we all licked the spoon and ate chunks of it in between cooking cookies. That all subsided when it became unsafe to eat the dough because of the raw eggs and flour in it. This all being because of the raw eggs and uncooked flour causing salmonella and food poisoning.

As for today’s cookie dough, our mouths water just thinking of Ben & Jerrry’s Chocolate Chip Cookie dough ice cream. Although, they use egg in the dough. So! All the more reason to eat vegan cookie dough.Try out this yummy recipe of Dairy And Gluten Free Chickpea Cookie Dough and let me know what you think. Throw it in some vegan ice cream. It’s delicious!

How To Take The Skin Off Of Chickpeas

Chickpeas are so delicious and versatile for many different dishes. Although, one thing most people don’t know is that if you take off the skins the texture when blended becomes very smooth. They are perfect to use for a thick creamy base.

When taking the skins off make sure to drain and rinse them well under cool water. Sometimes if you just put the chickpeas in a bowl and swish them around a lot of the skins will come off. That doesn’t always work but it’s a good trick when it does.

The other way is to take the little chickpea and pinch the pointed end between your fingers and the skin will come right off. It can be some work to skin a whole can, but you only need to do about half of them. Thats only if you want the cookie dough to be a little more creamy. Like the photo below.

How To Make Dairy And Gluten Free Chickpea Cookie Dough

This truly is a very quick dessert to make and for a fast gratification. First drain and rinse the chickpeas well. Then take off the skins if desired. Throw them into a food processor ( I use Hamilton Beach Food Processor) and add the peanut butter and vanilla extract flavoring. Blend until it is mixed together and scrape the sides when needed.

Add the rest of the ingredients except the dairy free chocolate chips. Mix these ingredients all together in the food processor again. Scrap the sides as needed. Mix for about 2 minutes to get it smooth. Take the dough out of the food processor and into a mixing bowl.

Add to it the dairy free chocolate chips if they are mini sized. If they are larger take a large sharp knife ( I use Ninja Knives) and chop them up small. Add them to the dough and mix them in with a wooden spoon. Your cookie dough is ready to eat. You can put it into the refrigerator to harden more or serve right away.

What Desserts To Create With Dairy And Gluten Free Chickpea Cookie Dough

We all love eating raw cookie dough just the way it is but there are other delicious and decadent ways to dress it up. Try rolling it into balls and covering it with chocolate for an interesting truffle cookie dough. Mix small balls or chunks in soft ice cream or use as an ice cream topper. Use the cookie dough as a layer to an ice cream cake or layer to a vegan cheese cake. Put it on top of a brownie or thick shortbread cookie. Really there are endless ways to enjoy this dessert.

I hope you love this Dairy And Gluten Free Chickpea Cookie Dough as much as we do. Enjoy!

Ingredients

Units Scale

Dairy And Gluten Free Chickpea Cookie Dough

  • 1 (15 oz.) can Chickpeas, rinsed, drained and peeled
  • 1/4 cup Organic Peanut Butter (or nut butter of choice)
  • 5 Tbsp Brown Sugar or Coconut Sugar
  • 1 1/2 tsp Vanilla Extract
  • 1 1/2 tsp Coconut Oil, melted
  • 1/8 tsp Sea Salt
  • 1/4 tsp Baking Soda (this helps with the real cookie dough taste)
  • 2 Tbsp Oat Flour or Coconut Flour
  • 3 Tbsp Dairy Free Chocolate Chips

Instructions

Dairy And Gluten Free Chickpea Cookie Dough

  1. Rinse and drain the chickpeas. Take at least half of the skins off of the chickpeas or off of all of them. (optional) Just pinch the pointed end of the chickpea and the skin comes right off. This will help the dough to be smoother.
  2. Put the chickpeas into a food processor (I use Hamilton Beach Food Processor) with the peanut butter and vanilla extract. Blend and then stop to scrape the sides of the food processor, blend again and scrape the sides.
  3. Add the rest of the ingredients except the chocolate chips.
  4. Blend everything until it is very smooth. (about 2 minutes) Scrape sides as needed.
  5. Take the dough out of the food processor and into a bowl.
  6. Add the dairy free chocolate chips. If they are mini chocolate chips then just add them, but if they are larger chocolate chips, chop them up with a large sharp knife ( I use a Ninja Knife) Stir it all together.
  7. Ready to serve or put in the refrigerator to cool to get harder.
  8. Enjoy!

Notes

If you want to make the dough creamer just add more nut butter.

You can use almond flour instead of the oat flour, but you will need to add a little extra then what is called for in this recipe for a flour replacement.
