Delicious Spicy Saucy Vegetable Meal
This Vegetable Quesadilla With Avocado And Bitchin Sauce makes for an outstanding vegetable dinner. These tortilla’s are stuffed with a vegetable medley of broccoli, zucchini, cauliflower, sweet peppers, onions, salsa and salted pumpkin seeds. All sautéed in a butter base dazzled with a little Chipotle Bitchin Sauce folded over and topped with sliced avocado and more Chipotle Bitchin Sauce. Super outstanding! Perfect as a side or main course. Goes wonderfully with most Mexican and Spanish dishes.
What Is Bitchin Sauce
Bitchin Sauce was founded by raw vegan CEO Starr Edwards who whipped up this dipping gem when she was only 16 years old. She was looking for a vegan sauce to create that had a creamy resemblance of dairy. She just threw ingredients from the pantry together to make it just the way she wanted.

All the wholesome ingredients to this amazing sauce are organic. The base is made with almonds and truly vegan through and through. Starr created this in hope of having a great raw vegan sauce for herself. Little did she know it would be a hit throughout the United States. It is now in nearly 7,000 stores nationwide, like Costco, Target and Whole Foods.
As far as I know the company has 19 Bitchin Sauce dips in different flavors. Some are spinach and artichoke, heat, buffalo, caramelized onion, pumpkin pie, dill pickle and more. Look them up and give them a try. I am sure you won’t be disappointed, but first try out this Chipotle Bitchin Sauce. It’s my favorite! It works wonderfully in this Vegetable Quesadilla With Avocado And Bitchin Sauce.
How To Cook The Vegetables For Vegetable Quesadilla
This recipe is made for single servings. So if you are making it for more then one person make sure to double or tripe the amount of vegetables and other ingredients.

First I heat a medium size skillet on medium heat and add 1 tablspoon of vegan butter. Add the onions and peppers. Sauté for about two minutes and then add the broccoli, cauliflower. Sauté for 2 more minutes then add the zucchini’s and sauté until they are lightly cooked.

Add the heaping tablespoon of either homemade salsa or your favorite salsa and a tablespoon of salted pumpkin seeds. Take the skillet off of the heat and set aside.

How To Assemble These Quesadillas With Avocado And Bitchin Sauce
Heat a large skillet on medium to medium low heat. I use American made Lodge Cast Iron Skillets most of the time. They are perfect for heating the tortillas in when constructing the quesadilla.
Heat the large tortilla until heated. Next turn the tortilla over to heat on the opposite side. Make sure that the tortilla is not burning. They may brown slightly.

When you have turned it over fill half of the large tortilla with the sautéed vegetables. Top it with thin slices of avocado and drizzle organic Chipotle Bitchin Sauce (you can choose the Bitchin Sauce of your liking but I really like the chipotle flavor for this recipe). Fold the tortilla in half over the vegetable mixture.

Take the folded quesadilla out of the skillet cut it in half. Top with more thicker slices of avocado and more Chipotle Bitchin Sauce. Then add more salsa, cilantro, green onions and salted pumpkin seeds, if desired. Serve with tortilla chips to help pick up the drippings and to dip with more Chipotle Bitchin Sauce. Truly delicious!

I hope to make more of these recipes using Bitchin Sauce. It’s a new found craze for me. We love this personal creation of mine. I hope you love it as much as we do. Enjoy!

Description
This Vegetable Quesadilla With Avocado And Bitchin Sauce makes for an outstanding vegetable dinner. These tortilla’s are stuffed with a vegetable medley of broccoli, zucchini, cauliflower, peppers, onions, salsa and salted pumpkin seeds. All sautéed in a butter base dazzled with a little Chipotle Bitchin Sauce folded over and topped with sliced avocado and more Chipotle Bitchin Sauce. Ready in about 15 minutes. This is a single serving recipe.
Ingredients
Vegetable Quesadilla With Avocado And Bitchin Sauce
- 3 florets of Organic Broccoli
- 2 to 3 florets of Organic Cauliflower
- 2 small Organic Sweet Peppers
- 1/4 cup chopped Onion, of choice
- 1/3 cup of thick julienne sliced Organic Zucchini
- 1 Tbsp Vegan Butter
- 1 Lg heaping Tbsp Organic Salsa
- 3 Tbsp of Organic Chipotle Bitchin Sauce or favorite Bitchin Sauce of choice
- 1 sliced Avocado
- 2 Tbsp Salted Pumpkin Seeds
- 1 Organic Flour Tortilla
Instructions
Vegetable Quesadilla With Avocado And Bitchin Sauce
- Clean and cut up vegetables.
- Heat medium skillet on medium heat. Add vegan butter and onions and peppers. Sauté for 2 minutes. Add the broccoli and cauliflower and sauté for 2 more minutes. Add the zucchini, 1 tablespoon of salted pumpkin seeds and salsa. Cook for one to two minutes until the zucchini is softening.
- Take the skillet with the veggies off of the heat.
- In another skillet (I like to use my American made Lodge Cast Iron Skillet for this part) heat on medium to medium low heat. Add the single large tortilla shell and heat on one side until heated through or slightly brown. Do not burn!
- Turn the tortilla over to heat the second side. While it is on the second side fill the half of the tortilla with the sautéed vegetables. Add some sliced avocado and drizzled Chipotle Bitchin Sauce on top of the sautéed vegetables. Fold over the half of the tortilla that has no vegetables on it and fold it on top of the sautéed veggies and avocado and Bitchin Sauce. Pat down the tortilla so that it stays together. This is your quesadilla.
- Take the quesadilla out of the skillet. Cut it in half and top it with more sliced avocado, salsa, Chipotle Bitchin Sauce and salted pumpkin seeds.
- Add more toppings like cilantro, green onions and vegan sour cream if desired.
- Serve with tortilla chips and Chipotle Bitchin Sauce as dip.
- Enjoy!
Notes
