It all depends on what kind of shredded coconut I have in the house. I have made it both with unsweetened shredded coconut and sweetened coconut. They both work very well.

For summer time fun coconut is a great choice to eat. It is full of potassium, sodium and magnesium and really helps in preventing dehydration, especially when drank as coconut water. In this recipe you can add a quarter cup of coconut water to add electrolytes if you wish to but it will dilute the pineapple juice flavor.

There is really no magic to this fruit salad. You can add or subtract certain fruits like strawberries and kiwis. These fruits are very seasonal so they are not always around all year long. This fruit salad is very delicious with or without them.
This fruit salad really only takes minutes to construct. The trick to all the liquid to this salad is saving the pineapple juice from the can of pineapple. Make sure to keep this liquid and not throw it out. If you are using fresh pineapple make sure to buy an extra jar of pineapple juice to add to the fruit salad. This liquid helps keep the salad moist and helps the bananas from turning brown.

Sometimes I use canned mandarin oranges instead of tangerines. I have also used organic oranges as well. So this recipe is very versatile. Sometimes it all depends on what I can find in the store. At certain times of the year tropical fruit is not very fresh so I get what I can to create this fruit salad. Honestly once you add the pineapple juice and the shredded coconut it is so refreshing and delicious. So try this fruit salad in whatever means you have and it will turn out great.

Vegan Tropical Fruit Salad
Equipment
- 1 Large salad bowl
- 1 Large serving spoon
- 1 Chopping board
- 1 Sharp knife
- 1 Set of measuring cups
Ingredients
Vegan Tropical Fruit Salad
- 1 15 to 16oz can Organic Chunk Pineapple or 1 Fresh Organic Chunked Pineapple, do not drain the pineapple put the juice in the fruit salad. If it is a fresh pineapple add a cup of fresh pineapple juice.
- 3 Bananas, sliced ½ inch thick
- 2 Tangerines, peeled and segmented
- 2 Kiwi, peeled and chunked
- 6 Large Fresh Organic Strawberries, 3 Extra Strawberries For Garnish washed and sliced in ¼ inch slices, or chunks
- 1 cup or more Shredded Coconut, unsweetened or sweetened
Instructions
Vegan Tropical Fruit Salad
- In a large salad bowl add the 15 to 16oz of chunked Organic Chunked Pineapple with the juice, (If you are using a fresh pineapple add some fresh organic pineapple juice bought in a jar), 3 sliced bananas in ½ inch chunks, 2 tangerines peeled and segmented (try to clean off the white membrane on the segments as good as you can), 2 peeled and chunked kiwi, 6 large or 8 small strawberries sliced in ¼ inch slices or chunks. 1 to 1½ cups of shredded coconut. Mix all together.
- The pineapple juice is used to keep the bananas looking fresh. So make sure it is mixed well.
- Top with 3 fresh organic strawberries for garnish.
- This will only keep for two days because the bananas will start to turn dark by the 3rd day.
