First as always! Let’s look at some research on mint and the history on where it came from.
A Little History Of Mint
We have all known of mint to be used for it’s refreshing cool flavor. The perfect breath freshener, but did you know it has medicinal qualities as well. It can be used as a digestive aid, help with allergic reactions and even help with soothing the every day cold as a decongestant.
Mint is also called mentha and belongs to the Lamiaceae plant family. This plant species has 15 to 20 other relatives in it’s family including peppermint and spearmint.

If you know anything about growing this beautiful culinary food, you will know it is a crazy growing plant. Mint is crazy because it is so invasive. It has to be be grown in containers where it can be kept under control. It has to be this way because it will take over you yard or garden.
There is a Greek God myth that Menthe was a nymph loved by Pluto who was God of the underworld. Pluto’s first love was Proserpine, and so be it by jealousy of Proserpine’s beauty Menthe morphed her into a mint plant so that she would be trampled on by mere humans on earth. I’m glade I wasn’t a Greek Goddess or nymph! Ha!

As we can tell by this story mint originated in the Mediterranean, but was later introduced to other parts of Europe and later to America. Definitely into Ireland where you can enjoy this tasty refreshing Vegan Shamrock Irish Mint Sauce that I have made for you here today. Give it a try as a dessert topping, I think you will like my original recipe.

How To Make Vegan Shamrock Irish Mint Sauce
First wash and clean the spinach and mint leaves. You don’t have to dry them. Add them into a blender or smoothie blender ( I use Ninja BL770 Mega Kitchen System smoothie attachment. This leaves it really smooth).

Add the coconut cream (I like to use Trader Joe’s coconut cream because it’s so good and half the price) and the rest of the ingredients.

Blend until smooth or when you only see little small bits of green mint. Test it for taste. You may have to do this often to get it to the right amount of how you want it. You may have to add more mint or Mint Stevia Clear. If it has enough mint and you want it sweeter then add more maple syrup.

If you are making it for a chocolate dessert it may be too weak in mint taste for the chocolate so please do adjust it as needed.
Dessert List To Use Vegan Shamrock Irish Mint Sauce With
I have been experimenting with this sauce for a while. It is a sauce that can truly be adjusted to whatever dessert you are preparing. If it is a mild vanilla ice cream or cake you are using it for make sure the mint isn’t too over powering. It can dominate the vanilla. Although, if you are making it for a chocolate dessert you may have to make the mint stronger in flavor.

Enjoy this dessert mint sauce on cakes, ice cream, brownies, grasshopper pie, flourless chocolate cake, and even in smoothies. I have yet to use it as the dairy substitution in recipes. I think that would work out great for flavoring.
We really love this original recipe topper. I hope you like it as much as we do. Enjoy!

This sauce is made with fresh mint, coconut cream, maple syrup, mint extract and more. It is so perfect on top of desserts like ice cream, brownies, cakes, hot chocolate, ice cream Sunday and even a nice addition to smoothies. Play with this recipe and add it to vegan cream cheese to make a cheese cake version of this sauce. It is a very versatile dessert topping and perfect for Holidays like Easter and St. Patrick’s Day festivities.
Ingredients
Vegan Shamrock Irish Mint Sauce
- 1 can Organic Coconut Cream
- 3 to 4 Tbsp Real Organic Maple Syrup
- 1 tsp Mint Extract or Peppermint Extract
- 1/2 tsp Real Vanilla Extract
- 10 to 15 drops of Mint Stevia Clear
- 25 Fresh Mint Leaves
- 8 small Spinach Leaves (optional for coloring)
- Pinch of Salt
Instructions
Vegan Shamrock Irish Mint Sauce
- In a blender or smoothie blender ( I use Ninja BL770 Mega Kitchen System smoothie attachment) put all the ingredients and blend until smooth.
- Check the sauce for flavoring to see if it needs more mint or drops of Mint Stevia Clear. If the mint is strong enough and you want it sweeter add more maple syrup. If you want it greener add 2 more small spinach leaves (you can’t taste the spinach because the mint is a strong flavor).
Notes
Store in an air tight glass container for up 5 days.
Sometimes when I want it to be very minty I use lots of the Mint Stevia Clear. Just add it slowly and taste to see for acquired taste.
The sauce will get harder after being in the refrigerator. Take it out an hour before serving and let it get soft at room temperature. You can put it back in the blender or smoothie blender before serving to mix it up again.
