These Vegan Oatmeal Raspberry Thumbprint Cookies are made with oatmeal, almond meal, maple syrup, vegan butter, cinnamon, vanilla and salt. So very easy blended in a large food processor. Roll into balls push a small indent into the dough, fill with jam and bake. Ready in 15 minutes and makes 24 deliciously sweet cookies. A Little History On Raspberry Thumbprint Cookies

Thank you to Sweden for the recipe creation of the original thumbprint cookie. Going back to the 1800’s these little buttery nuggets were simple with delicious flavor. Of course jam wasn’t as commercialized as it is today and everything that had fruit in it truly had real fruit. So imagine the goodness of one of these Swedish thumbprint cookies that they called ‘Hallongrotta‘ meaning the ‘raspberry cave‘ in Swedish.

With ingredients being a minimum of sugar, butter and flour they became popular across the world. Different countries made a creative twist to each region putting a unique spin on these classic cookies making it their own. Being that Persia made sugar more accessible in the 7th century AD bakers started to create much sweeter pastries. Soon the thumbprint cookie was being filled with all sorts of fruit and berry jams, lemon curd and caramels.

On the inventive end of it all, baking soda was created and revolutionized cookie baking in the 19th century allowing for a more lighter texture. Low and behold baking has never been the same. This created a softer dough putting a real spin on this old world cookie.

Today so many variations have been created and still moving forward with new versions. Hence, this recipe I have for you today of Vegan Oatmeal Raspberry Thumbprint Cookies. With no eggs, no milk, no baking soda and no real cows butter it is a wonder how it all stays together. The only true nostalgia of the history of these cookies is the thumbprint itself filled with jam. I think the love here is a light flavored dough with fruit jam. Brings out the little child in everyone. Enjoy!

Picking Jam For Thumbprint Cookies

Everyone has their favorite filling for thumbprint cookies. Although, I do find that a nice tart full berried raspberry or strawberry preserves is especially good. My favorite raspberry or strawberry preserves is from Trader Joe’s it is so thick it is as if you just made it from scratch yourself. It is a great find. Yes it has sugar in it but really you taste the fruit more then the sweetener. So I think the ratio of sugar to fruit is quit low.

There are many jams and preserves out there but it is hard to find good ones anymore. I also like a good apricot or mulberry but that seems to be seasonal. I’ve also tried caramel and chocolate filled. Let me know what your favorite vegan thumbprint cookie filling is. I would love to try it!

How To Make Vegan Oatmeal Raspberry Thumbprint Cookies

This is an old recipe I have been making for over 30 years. I first found it in American Vegetarian Cookbook from the Fit For Life Kitchen by Marilyn Diamond. I modified it a little with adding whatever organic flour I like and vanilla flavoring and salt. It’s been a go to since my daughter was little. Still love it!

When making these Vegan Oatmeal Raspberry Thumbprint Cookies I use a large food processor ( I like my Hamilton Beach Food Processor for this).

I use sprouted gluten free oats or regular old fashion oats for this recipe. You can find these sprouted oats at most holistic grocery stories or at Costco.

Put the oats in the food processor and pulse it until it is fine but small textured like the photo below.

Then add the almond meal, organic all purpose flour or oat flour, cinnamon and salt.

Pulse to mix thoroughly. Then you can either add the liquids to the food processor or put it in a bowl if you are making a double batch. Most food processors can’t hold a double batch.

How To Form Thumbprint Cookies

Wet your hands and form the dough into a little bigger then a quarter sized coin. Place on a sheet pan, press down slightly to flatten. With your thumb or small spoon indent into the middle of the cookie a small hole.

Fill the cookie with your favorite tart raspberry preserves or jam. Don’t over fill because when it is baking it will overflow. Fill just enough to fill the indentation.

Put in a 350 degree preheated oven and bake for 15 minutes or until slightly golden. Makes about 24 cookies.

I hope you like this old recipe I have modified as much as we do. It’s the perfect recipe to make with your children. They love to make the thumbprints. Only you might have to make them bigger because they are little thumbs. Enjoy!

Vegan Oatmeal Raspberry Thumbprint Cookies

  • 1 cup Almond Meal
  • 1 cup Sprouted Organic Oats or Organic Old Fashion Oats
  • 1 1/4 cups Organic Oat Flour or Organic Whole Wheat or Organic All-Purpose Flour
  • 1/2 tsp Ground Cinnamon
  • 1/2 cup Organic Maple Syrup
  • 1/2 cup Melted Vegan Butter or Organic Sunflower Oil
  • 1/2 tsp Vanilla Flavoring
  • 1/4 tsp Sea Salt or Celtic Salt


Instructions

Vegan Oatmeal Raspberry Thumbprint Cookies

  1. Preheat oven to 350 degrees.
  2. Put organic sprouted oats or organic old fashion oats in the food processor (I use Hamilton Beach Food Processor) and pulse them until they are small in texture. Like the photo above. Add the almond meal, flour and ground cinnamon and pulse until mixed together. (If you are making a double batch put the dry ingredients into a large bowl and add the liquid ingredients to it and stir with a large wooden spoon until combined).
  3. Add the wet ingredients to the food processor and pulse until combined.
  4. Wet hands and form the dough into a little larger then a quarter coin.
  5. Place on a cookie sheet pan and press the tops lightly. Put an indentation with your thumb or small spoon into the cookie. Fill the cookie with preserves or jam.
  6. Bake for 12 to 15 minutes or until golden.
  7. Enjoy!
