Vegan Green Curry Chive Soup

This Vegan Green Curry Chive Soup is an old favorite Thai influenced soup. The coconut milk base and green curry paste was always a hit with my daughter. This soup can be made a variety of ways and I just created this new chive recipe variation. I am loving all the onion chive flavoring with the coconut milk, garlic and onion. It is really an onion base soup. This is definitely a special rainy day kind of hot meal. Add some fresh lemon, fresh basil, extra chives and a dollop of sticky calrose rice and what a big hit for the whole family. If your family is like ours it is hard to pass up sticky rice, so make a lot.


How To Make Vegan Green Curry Chive Soup
Making this Vegan Green Curry Chive Soup is so quick and easy. I am at my parents farm for a visit and I noticed my Mothers large bunch of chives. Most people have chives in their yard because it comes back every year. A very easy addition to many meals and a great alternative to onions. Then it came to me to use it in my green curry soup I was making. What a nice change up and delicious flavor.

These are some beautiful chives. They are fresh right out of the garden. I wish the rest of the vegetables could be as fresh, but it is still too early in the year. I like to add a variety of veggies to this soup. Here I am adding three potatoes, one medium onion, about five cloves of garlic and one large carrot. Sometimes I add snow peas, red peppers, bok choy or cabbage.
As for the spices I do not get very carried away. This is a nice low key inexpensive meal. The Thai green curry paste and coconut really make this dish. Although, you can add a little ginger if you desire. I like using white pepper for a little kick and some times some hot sliced peppers for a topper. This time I really wanted to enjoy these fresh chives and the subtle taste of the carrots and potatoes.

For the protein I added a whole package of drained extra firm tofu. I find that if I make this soup early in the day the tofu will really pick up the flavors in the soup. If you want your tofu to be extra flavorful them cook the tofu on low in the broth and put everything in but the potatoes, carrots and chives. This will help the tofu be a little more robust.
Garnish For Vegan Green Curry Chive Soup

I love some extra lemon to squeeze on top of this soup. Although, you can use lemon grass to enhance this soup and it is delicious, but if you don’t have any, lemon works just fine. Some extra chopped chives, fresh basil, lemon slices, green onions and hot peppers are fantastic garnishes as well. I hope you like this Vegan Green Curry Chive Soup as much as we do. Enjoy!

Vegan Green Curry Chive Soup
Equipment
- 1 Large Pot
- 1 Stirring spoon
- 1 Ladle
- 1 Cutting board
- 1 Sharp knife

Ingredients
Vegan Green Curry Soup
- 2 Tbsp Extra Virgin Olive Oil
- 1 med Yellow Onion
- 5 Cloves of Garlic
- 4 cups Vegetable Broth
- 1 can Coconut Milk
- 3 to 4 tsp Thai Green Curry Paste
- ¼ tsp White Pepper
- 3 med Potatoes, cut into quarters
- 1 Lg Carrot, sliced
- 1 package Extra Firm Tofu, chopped into 1 inch cubes
- 1 cup Fresh Chives, chopped into 1 inch pieces
- 2 Fresh Lemons, sliced
Calrose Rice
- 1½ cups Calrose Rice
- 2 cups Water
Garnish Toppings
- 1½ Lemons, sliced or cut into wedges
- 1 bunch Fresh Basil, sliced
- Hot Peppers, sliced thin
- Fresh Chives, cut into 1 inch pieces
Instructions
Vegan Green Curry Soup
- In a large pot on medium low heat add the olive oil, onions and garlic and cook until the onions are translucent. Do not burn.
- Add the vegetable broth, coconut milk, white pepper and Thai green curry paste. Stir to delusive the Thai green curry paste. Add the chives, potatoes, carrots, cubed tofu and slices of half a lemon. Cook on medium low for 30 minutes or until the potatoes and carrots are cooked.
Calrose Rice
- Rinse the 1½ cups of calrose rice in water. Drain, add the 2 cups of water and cook for 20 minutes. Take off of heat and let sit for 5 minutes.
Garnish Toppings
- Top with sliced or wedged lemons, sliced chives, sliced green onions, fresh sliced basil and thinly sliced hot peppers.
- Top a bowl of soup with a dollop of calrose rice and any of the garnishes. Serve and enjoy!
