Refreshing Crunchy Sweet and Tangy Summer Favorite Salad

This Vegan Cucumber Watermelon Salad is a summertime delight. With only five ingredients for the salad and topping it with a four ingredient zesty sweet lime dressing. This is a salad where you can take all the ingredients with you and create it on sight. Very easy to make and one the whole family can help create. Make this salad a family summer memory that your family and children will want every summer.

How To Pick Out A Good Watermelon

When I get a fresh organic watermelon I look for the ones that are whole and not cut in half. A whole watermelon will last about 7 to 10 days in the refrigerator while a cut half of one will only last about two days. You want to pick one that is firm with no cuts, dents or bruise spots. Always select the heaviest watermelons. They will be full of water with the most flavor and will be the ripest.

Let’s talk about that yellow spot or ground spot where the watermelon sat on the ground. The yellower or darker the ground spot is the riper the watermelon. Avoid watermelons with very pale or white field spots. This means that it was picked too early and didn’t have time to ripen. Plus always look for a green stem.

Give your big baby watermelon a knock on the side with your knuckles. Listen to how it sounds. If it is a dull sound then it is not quite ripe. If you knock and it sounds like a deep hollow sound them thats the one for you. Although, if you knock and it knocks back. Please, go get your grocer because thats just not right!

How To Make Vegan Cucumber Watermelon Salad

This Vegan Cucumber Watermelon Salad is one of the easiest salads to make. The time in making the salad is cutting up the watermelon. I like to cut my watermelon into quarters, and then take slices off of that and cut the rinds off with a sharp knife. But, if I have a small watermelon like I used for this recipe I like to cut it in half. Then I cut slices off of the half and cut the rind off. Like the photo below. But you can cut it and slice it any way you like.

After cutting up your watermelon cut your English cucumber into long quarters and cut chunk slices off of it. Add them both to a large bowl. Next clean and dry the mint and basil leaves with a paper towel. Drying them helps the lime dressing stick to it after you pour it on the salad. Cut the large leaves into thirds but add the small leaves whole. You can add more then what the recipe says if you like these herbs. Just remember that they are strong tasting and depending on who is eating it they might not like it as much as you. Next add the crumbled vegan feta cheese.

Making The Lime Dressing

I love this lime dressing. I will be incorporating it into other recipes. I’m a sucker for citrus and this has become my favorite dressing this summer. I have really liked it on just a simple bed of greens, spring onions, golden raisins with berries and nuts. It is so refreshing and easy to make in a matter of minutes. Great dressing to make when your in a pinch.

I just make this lime dressing in a small mixing bowl. I use agave instead of honey for this recipe because I like to take care of the bees and add as little honey as I can to recipes. The agave works really great in this lime dressing.

Then add the organic extra virgin olive oil and organic freshly squeezed lime juice. Mix it all together with a small whisk and quickly pour it over the large bowl of prepared Vegan Cucumber Watermelon Salad mix. Toss it together with a large spoon and it is ready to serve.

If you are on a Plant Based diet just eliminate the vegan feta cheese unless you can find one just made with nuts. Also eliminate the olive oil. This salad is still real good and refreshing without these two items.

Vegan Cucumber Watermelon Salad

  • 1/2 med Organic Watermelon, (peeled and cut into cubes)
  • 1 large Organic English Cucumber, (cut into cubes, about 2 cupfuls )
  • 17 Organic Fresh Mint Leaves, (chopped large)
  • 17 Organic Fresh Basil Leaves, (chopped large)
  • 1/2 cup Vegan Feta Cheese, (crumbled. (Eliminate for Plant Based diet))

Lime Dressing

  • 2 Tbsp Organic Agave
  • 2 Tbsp Organic Lime Juice
  • 1 Tbsp Organic Extra Virgin Olive Oil, ((Eliminate for Plant Based diet recipe))
  • Sea Salt, (to taste, about 1/4 tsp or more)


Instructions

Vegan Cucumber Watermelon Salad

  1. Clean and cut everything for the ingredients for the salad and put into a large bowl. Don’t forget the crumbled vegan feta cheese.
  2. In a small bowl combine all the lime dressing ingredients and mix well together with a small whisk. Pour over the salad ingredients and mix together with a large spoon. Ready to serve.
  3. Enjoy!

Notes

Store covered with plastic wrap or an air tight container for 2 days. It is best the first day and will start to get very runny.
