This tasty umami dish is flavored with onions, garlic, parsley and the extra buttery taste of nutritional yeast. With this recipe having gluten-free ingredients it is hard to believe how flavorsome this recipe is. This is a perfect dinner for four with an added side salad and dinner roll. History of Mushrooms
Mushrooms are truly amazing and delicious, but did you know that according to upr.org mushrooms overtook the land long before trees. Yes! At one time the earth use to be covered by 24-foot high giant mushrooms. One mushroom would be enough food for a year. Shocker, I know!
Mushrooms are a very important ecosystem. They meander through the earth and decompose matter and recycle important nutrients to replenish healthy soils. This magic helps all humans and plants to flourish. They are a serious interface between life and death. If we could see the world without them we would be buried under layers if trees and infertile soil.
They were a worshiped food of delicacy in Ancient Egypt and only reserved for Egyptian nobility. They were banned for anyone else to consume and forbidden to be touched. Hence the Egyptian royals considered mushrooms to be plants of immortality. No wonder people are living longer now.
How To Pick The Mushrooms For Vegan Creamy Kale and Mushroom Sauce
For this recipe you will need about a pound of mushrooms. I use a variety of about three different species of mushrooms. These are the easiest to find in the grocery store, portobello, porcini and button mushrooms. Although, if you can find shiitake and morel (morel are not normally in stores but you can find them in the woods) with porcini and portobello then it will be heavenly tasting. It will be a very rich sauce in umami.
Make sure to pick fresh healthy mushrooms. If they are turning dark grey in color on the stems of the mushrooms then they are getting old. If they are getting sticky or slimy on the tops of the mushrooms they are past their peek. Find a different mushroom if your normal mushrooms you pick are not fresh. You may find a gem in flavor that you have never tried before.

How To Make Vegan Creamy Kale and Mushroom Sauce
This is one of the easiest sauces that I make. I heat a large skillet on medium heat. Then I add vegan butter and pan fry the onion, garlic and mushrooms for about 5 minutes, stirring often. After that stir in the flour and cook for one more minute.
This is where you can choose what kind of cream you want to use. I use the brand Native Forest Organic Coconut Cream. I love how creamy it is, it’s one of my favorites.

Stir in the cream with the mushroom mixture and then add the vegetable broth or Vegetable Better Than Bouillon, nutritional yeast (optional), chopped fresh kale and parsley. Save some extra parsley to add as garnish to the top of your prepared meal. Cook and stir often for about 5 minutes or until the mushrooms are soft.

Cassava pasta is just like cooking regular pasta. It only takes about 13 minutes to cook in boiling water. Test for doneness like you do white pasta for your desired doneness. Drain well and add to the Vegan Creamy Kale and Mushroom Sauce. Mix together heat through and serve.

Ingredients
Cooking The Cassava Penne Pasta
- 3 quarts Filtered Water
- Salt
- 8 oz Jovial Grain Free Cassava Penne Pasta
Vegan Creamy Kale and Mushroom Sauce
- ¼ cup Vegan Butter, for lectin-free meal use olive oil
- 1 small Onion
- 1 Garlic Clove, minced small
- 1 lb 3 Types of Mixed Mushrooms, of choice
- 4 large Leaves of Fresh Organic Kale, washed and chopped
- 1 Tbsp Millet Flour, or any gluten-free flour
- 5.4 oz. can Heavy Coconut Cream
- 2 Tbsp Nutritional Yeast, optional
- 1 cup Vegetable Broth or Vegetable Better Than Bouillon, if using bouillon use 1 cup of water with it.
- 3 Tbsp Fresh Parsley, chopped
- 1 tsp Fresh Thyme
- Salt and Pepper, to taste
Instructions
Cooking the Cassava Penne Pasta
- Cook the cassava pasta according to the directions on the box. Drain well.
Making The Vegan Creamy Kale mushroom Sauce
- In a large skillet on medium heat add the vegan butter, chopped onion, minced garlic and mushrooms. Cook for 5 minutes stirring constantly.
- Sprinkle the millet flour over the mushrooms and cook for 1 minute.
- Stir in the coconut cream, kale, parsley, thyme and nutritional yeast. Cook 5 more minutes or until the mushrooms are soft.
- Toss the cooked drained Cassava Penne Pasta in with the mushroom sauce. Mix together and warm through. Ready to serve.
- Top the kale mushroom pasta dish with fresh cut parsley, fresh thyme and vegan parmesan cheese. Serve with a side salad and dinner rolls.
