These Three Easy Inexpensive Homemade Olive Oil Crackers are more delicious then store bought. This recipe makes about 75 crackers and cost about a surprising $1.00 to make. Whip these up in no time for your next party, work week or just to go with that tasty favorite dip you enjoy. This is a fun cooking project for the whole family. So get the kids involved and cut out their favorite shapes and have some laughs. Playing in flour is always fun.

A Little History Of Homemade Crackers

Back in the day crackers were first known as sea biscuits or pilot bread. They were invented in bakery in 1792 by a man in Newburyport, Massachusetts named Theodore Pearson. He created a version with a life span of pretty much “forever cracker” called hard tack. By 1801 he sold his crackers to sailors and soldiers as a non perishable staple food to survive sea voyages and war. It turns out his crackers survived the voyages and war better then the sailors and soldiers did.

By 1828 “Common Crackers” took the spot light and became the first commercially made crackers in Vermont. The were more of a biscuit you could split in two and top it with sweet and savory foods. These crackers had a long shelf life because they were made with simple everyday ingredients. Just like the recipe I’m sharing with you today.

How To Create The Dough For Homemade Olive Oil Crackers

This is where you create and separate the dough for Three Easy Inexpensive Homemade Olive Oil Crackers. Take a large mixing bowl and add all the dry ingredients. Mix it all together with a whisk and leave a well in the middle of the flour mixture.

Pour the water and olive oil in the middle of the well in the flour mixture. Mix it all together with a large wooden spoon. Once it is mixed together start to mix it with your hands.

If there are extra little pieces of dough on the sides of the bowl incorporate them into the mixture. If it is too dry add a teaspoon of water at a time to mix into the ball of dough. When done cut the ball of dough into three sections like the photo below.

How To Roll Out The Dough

The first step is to pre-heat the oven to 450 degrees and prepare a large sheet pan with a sprinkling of flour over it.

Sprinkle the surface you will be rolling out the dough on with a sprinkle of flour. Take one section of dough and flatten it out with your hand into a square or rectangle shape. Put it on the prepared surface cover it with parchment paper and roll it out with a rolling pin as close as you can get to the desired shape. If you can’t get it to thin out to about 1/8 of an inch then let it set for about 5 minutes and try rolling it some more. Flip it over and re-flour the surface again so as not to have the dough stick.

Seasoning and Cutting Your Olive Oil Crackers

We are going to use three different seasonings for the Three Easy Inexpensive Homemade Olive Oil Crackers. For this first one sprinkle sea salt on the top of the rolled out dough. Put the parchment back over it and with your rolling pin roll over the sea salt pressing it into the dough.

Cut long 1 1/2 to 2 inch strips down the dough and cut them as long or as short as you want them. You can also cut them into diamond shape, triangle or long thin strips.

Cookie cutters can be used but you will have left over dough and the extra salt will be in the left over dough to reform. This could lead to very salty crackers if you keep seasoning them. Just be mindful of your cut out strategy.

Next roll out the second olive oil cracker dough and top it with garlic powder and ground black pepper. Cut to your desired shape. Fill the sheet pan as full as you can get it. The crackers to not expand so you can fit them really tight.

Before putting them in the oven poke them two to three times with a fork. This helps the bubbles that rise while baking to release air and not form.

Making Homemade Olive Oil Crackers With Seeds

Some people wet the top of the olive oil crackers with water and add the seeds on top and then cut them and bake them. Although, with my experience a lot of these seeds fall off when taking them off of the rolled out surface. I take this third bit of cut dough, roll it out roughly and sprinkle caraway seeds and fennel over it.

I then mix it all together and roll out again. This way the seeds are mixed into the cracker and won’t pop off when lifting them off the surface. Place them on the prepared sheet pan and cook for the same time as the other crackers for about 12 to 15 minutes.

Adding More Flavors To Your Olive Oil Crackers

We have made sea salt, garlic and pepper and caraway and fennel crackers today. Although, you can add many varieties of spices such as smoked paprika, hot paprika, oregano, rosemary, sage, thyme, chives, onion salt, onion powder, cayenne pepper, chipotle powder, cinnamon and so much more. Experiment and see what you come up with. It is so wonderful that these crackers are so versatile because you can make them to match whatever food you are preparing for it to go with. Plus, they are so cheap to make.

How To Know When Your Cracker As Cooked

Depending on your oven, crackers will cook at different times. Just keep an eye on them and when the edges are starting to turn light brown they are done. Some ends will burn because they are too thin. Like in the photo below. Take out the ones that are cooking faster then the rest and continue to bake the ones on the sheet pan until they are done. You will have to do this with every batch of crackers.

Put the crackers on a bakers cooling rack until completely cooled. Store them in an air tight container. A tin container is ideal for keeping crackers fresh but plastic will do. Store them at room temperature for 7 to 10 days.

Freshening Up Homemade Olive Oil Crackers

Spread out your crackers as a single layer on a sheet pan and mist them with water. Bake them at 350 degrees for 6 to 10 minutes. Let them cool on a cooling rack and they should be re-crisped again.

Although, if they were already too soft, it might be they were rolled out and cut too thick. They might not re-crisp.

Ingredients

Olive Oil Crackers

  • 3 cups Organic All Purpose Flour, extra for preparing sheet pan and preparing surface
  • 2 tsp Sugar
  • 2 tsp Sea Salt
  • 1 cup of Water
  • 4 Tbsp Extra-Virgin Olive Oil
  • Toppings: Sea Salt, Black Ground Pepper, Fennel Seeds, Caraway Seeds


Instructions

  1. Have rack in oven set at the lower third of the oven.
  2. Heat oven to 450 degrees.
  3. Prepare baking sheet pan with a sprinkle of flour.
  4. In a large bowl mix together all the dry ingredients with an whisk.
  5. Create a well in the middle of the flour mixture and add the water and olive oil. Stir together with a large wooden spoon. Dough will be a little sticky, incorporate any little bits of ingredients in the bowl to the dough. Knead together with your hands.( just long enough to incorporate the ingredients) Add a teaspoon of water if the mixture is too dry. Mix together until you have a ball. Should be pliable and not hard.
  6. Divide the dough into thirds. Sprinkle the work surface with flour. Shape the dough into a flat square or rectangular shape with your hands. Place on the floured surface and place parchment paper over it. Roll out the dough with your rolling pin to desired shape starting with the center of the dough outward. Try to roll out to about 1/8 of an inch or thinner. If the dough is hard to roll out let it rest for 5 minutes and continue rolling it again.
  7. When to desired thickness add the sea salt or garlic and black pepper and place the parchment paper back over the dough and roll over it with your rolling pin to press it into the cracker.
  8. For the third piece of dough roll out a little add the caraway and fennel seeds and squish it back into the dough creating another ball. Reshape it again with your hands to desired shape and roll out like you did with the other crackers. Cut to desired shape.
  9. Poke holes into the crackers with a fork about two to three times.
  10. Bake in the oven for 12 to 15 minutes.
  11. Watch for crackers that start to brown before others and take them out of the oven. Remove them and put them on a bakers cooling rack and put the rest back into the oven to finish cooking.
  12. When all are done baking let them cool on a bakers cooling rack.
  13. Store in an air tight container or tin container. Tin containers are best. Store on the counter top for 7 to 10 days.
  14. Enjoy!
