Sweet Potato Pineapple Smoothie Bowl

This Sweet Potato Pineapple Smoothie Bowl has a nice sweet combination and still very nutritious. This is a refreshing smoothie blend for the summer when you need a quick cool down. The cranberry and coconut toppings are a must try.
When I make this Sweet Potato Pineapple Smoothie Bowl I sometime alter the amounts of pineapple verses sweet potato. I think thats all on how you enjoy both of these plant based foods. Sometimes I like more pineapple than sweet potato. This is totally up to you because the banana that is blended in has enough sweetness to carry both the pineapple and sweet potato in what ever amount you want to put in your smoothie.
I first discovered this smoothie by a “What If I put these three foods together in my smoothie?” I buy frozen chunked sweet potatoes at Trader Joe’s and I was thinking maybe I could use them like I do frozen bananas. To my surprise they worked out very well. The texture is a little less refined than a banana but hey maybe add more banana if that is what you like. I bake my sweet potatoes and freeze them myself for this recipe now. It’s very easy and always there when you need them.
I use more pineapple juice sometimes as well. This adds to a very nice liquid like smoothie. Great for sipping next to the pool. Stick a little umbrella in it and some extra wedges of pineapple on the side. Great for a hot summer day or a summer outdoor party.
I love cranberries and coconut toppings so they are my go to for my toppings for this smoothie bowl. I am obsessed with this granola with maple and sea salt flavoring by Bob’s Red Mill. You can find Bob’s Red Mill products in most stores. These toppings all go well together. One of my add-ons are pumpkin seeds or sunflower seeds as well. Sweet Potato Pineapple Smoothie Bowl
Equipment
- Blender or bullet and large spoon
- 2 serving bowls and 2 spoons
Ingredients
- 2 cups Vanilla Almond Milk
- 2 cups Frozen 1½ inch Chunks Sweet Potato
- 1 cup Fresh Pineapple
- 1 Fresh banana
Instructions
- In a blender add your almond milk or any plant based milk you desire.
- Add the frozen sweet potatoes, fresh pineapple and banana. Blend until smooth and thick. It will be done when you can't see and more sweet potato bits. Pour into your favorite bowl and top with dried cranberries, granola, coconut and pumpkin seeds or any of your favorite toppings. Serve while cold before it melts.
