Let’s look at a little history on carrots. Let’s see where they came from and any stories.
A Little History On Carrots
We all love carrots but did you know that when carrots were first discovered they were not orange. They were just about anything but orange like the color white, purple, red, yellow and even black. According to the Carrot Museum carrots were cultivated in Afghanistan area about 5,000 years ago. They were mostly purple in this region.

According to the Dutch in the 17th century carrots were selectively grown to be sweeter and less bitter. This selection also created orange carrots giving tribute to William of Orange who led the people of the Netherlands for there independence of Spain. Hence, the carrot became a royal vegetable of the House of Orange.

So many ways you can enjoy them. First try this Sweet Broccoli Carrot Raisin Salad and tell me how much you love them. Enjoy!

How To Pick Good Healthy Carrots
I have been to the grocery store and I have seen some pretty bad unhealthy carrots. Truly! I advise really looking over your vegetables before buying them.
If the carrots are wimpy, have light brown stops, moldy black tops or turning brown on the ends then don’t buy them. If they are firm and bright orange in color with green tops then these are the best ones to buy.

How To Make Sweet Broccoli Carrot Raisin Salad
This salad is a recipe creation of two separate salads that I really like. It has become one of our favorites.
First I start off with cleaning the broccoli under cool water and cutting it into bit size florets. Put them into a large bowl.

Then I peal and wash the carrots and shred them in a food processor.

Then I take a handful of the shredded carrots and put them in a small food processor with the raisins. (I add a small amount of carrots together with the raisins because this stops the raisins from sticking together.) I pulse these together until they are in small pieces. Then I add it to the broccoli and shredded carrots. Mix it together well and then make the maple red wine vinaigrette.

How To Make Maple Red Wine Vinaigrette
This vinaigrette was a wonderful creation surprise that I made for this salad. It is so quick to make with only 4 ingredients. I am sure you will love it!
In a small bowl add all of the ingredients and whisk it together. Whisk it for about a minute to really start to mingle the oil into the vinegar and maple syrup. While it is still spinning around from the whisking pour it on top of the Sweet Broccoli Carrot Raisin Salad. This stops the oil from separating.

Mix the salad really well together. Taste to see if it needs more salt.
I was delightfully surprised how good this salad turned out. My honey went back for seconds and it is difficult to get him to eat raw vegetables. So this was promising to make again for him. Thumbs 👍 up! I hope you like this recipe creation as much as we do. Enjoy!

Description
This Sweet Broccoli Carrot Raisin Salad is so quick and easy with only eight ingredients. This salad is made with fresh organic broccoli, carrots, raisins and Italian parsley. Topped with a whisked organic maple syrup, olive oil, red wine vinegar and sea salt. Toss it all together and serve.
Ingredients
Sweet Broccoli Carrot Raisin Salad
- 1 medium head of Organic Broccoli, cut into small florets
- 3 medium carrots, shredded in food processor
- 1/3 cup raisins
- 1/4 cup Italian Parsley, chopped
- Maple Red wine Vinaigrette
- 3 Tbsp Organic Olive Oil
- 2 Tbsp Red Wine Vinaigrette
- 2 Tbsp Organic Maple Syrup
- 1/2 tsp Sea Salt
Instructions
Sweet Broccoli Carrot Raisin Salad
- Wash the broccoli under cool water and wash and peal the carrots.
- Cut the broccoli into bit size florets and put them into a large bowl.
- In a food processor ( I use the Hamilton Beach Food Processor) shred the carrots.
- If you have a small food put a quarter of the shredded carrots and the raisins in the small food processor and blend until they are in small pieces like the photo above. You can chop this by hand if you don’t have a small food processor. Chopping the raisins really makes it a more flavorful salad to bring out all the sweetness. Put it all in the large bowl with the broccoli.
- Chop the Italian parsley leaves and add to the bowl of broccoli and carrots.
- In a small bowl add the olive oil, red wine vinegar, maple syrup and salt. Whisk it all together and pour over the vegetables in the large bowl. Mix all together well until the broccoli is covered in the vinaigrette.
- Serve!
- Enjoy!
