A Delicious Salad To Make In A Hurry

This Simple Vegan Kale Caesar Salad is the perfect salad to make in a flash. This is a recipe of equal parts kale and romaine lettuce. Just add the vegan parmesan cheese and some of your favorite croutons. Top it off with my homemade Easy Delicious Eggless Vegan Caesar Dressing and you have an amazing Caesar salad for lunch, brunch or dinner. This is a great salad to make ahead of time for work and add the dressing and croutons right before eating. This is a salad the whole family will love.

A Little History On The Name Of Romaine Lettuce

When we think of romaine lettuce we don’t really think about where it got it’s name. We just think, Oh “Romaine Lettuce” equals salad and good sandwiches, but it wasn’t always called Romaine. Let’s take a small look at the changes of it’s name and it’s journey throughout the world.

Scientifically Romaine lettuce was called Lactuca sativa var. longifolia, but the Romans called the lettuce Cappadocian lettuce. According to the history of this lettuce it’s name changed in the 14th century when the Popes moved from Rome to Avignon. The Popes brought this lettuce with them to grow in the palace gardens. This migration however changed the name of cappadocian lettuce and was thus called Avignon lettuce. To the world this lettuce came from Rome, therefore Europe named it ‘Romaine Lettuce.’

The History Of Romaine Lettuce And How It Was Brought To America

Some findings of the origins of romaine lettuce have been found to go back as far as 4,500 years ago. This finding was in cultivation of this lettuce by the ancient Egyptians. They believed that this lettuce was the viagra of the times and dedicated it to their fertility god called Min. This is probably why our world is so populated today.

Let’s go even further back in time to 5,000 years ago where the romaine lettuces original home was in western Europe and in eastern Mediterranean areas. It had been eaten cooked and raw by these cultures being the oldest form of cultivated lettuce known. Being that as it may, it became a far and wide spread cultivated lettuce throughout Europe.

For instance, we can give thanks to the second voyage of Christopher Columbus, who brought a variety of lettuces to North America in 1493. These lettuces are sought after today. In fact romaine lettuce is vastly produced by California and Arizona. We can not compare in any means to the production of China. China is the largest lettuce producer in the world, with such a grand output that it surpasses all other countries with a global harvest of 56.4%.

Nutritional Value Of Romaine Lettuce

Today we love our romaine lettuce and it is one of the healthiest varieties of lettuce to eat. Research has shown that it contains more minerals for bone health than any other lettuce. It is an excellent source of vitamin K, C and A, folate, lutein and high in antioxidants.

So needless to say, romaine lettuce has had it’s journey throughout time. It has been loved in many ways. We love it in this recipe I have made for you today of Simple Vegan Kale Caesar Salad. Enjoy!

How To Make Simple Kale Caesar Salad

I am calling this salad simple because it is. Regular caesar salad is so easy as well. The only difference with this salad is you use kale instead of romaine lettuce only.

When making this salad just use 50/50 of each kale and romaine. I use 8 leaves of romaine and 8 leaves of kale. This makes it balanced.

I like to use curly kale for this salad. Clean both the romaine and the kale under cool water. Pat them dry with paper towels or a lettuce spinner to get the excess water off. Make sure to massage the kale a little before adding it to the salad. This helps soften the kale and makes it easier to chew.

Add the greens to a large bowl and add the vegan parmesan, ( I like Daiyla brand of vegan Parmesan cheese) croutons and caesar dressing. Add black pepper if desired and green olives to add a little salt to replace anchovies.

Most people buy their caesar dressing form the store because finding vegan caesar dressing can be hard. Not only is it hard to find at times but you have to deal with all the preservatives and added ingredients that you don’t want.

This Simple Kale Caesar Salad is exactly that. Very easy to make. Just substitute half of the romaine lettuce with curly kale. It is a delicious change up to add kale to a caesar salad. Plus, I add my own recipe for homemade vegan caesar dressing. Top it off with vegan parmesan cheese, your favorite croutons and a little black pepper. Easy and quick salad to bring to work, have for dinner or brunch. Enjoy!

Simple Vegan Kale Caesar Salad

  • 8 Lg Romaine Lettuce Leaves, washed and dried
  • 8 Lg Curly Kale Leaves, washed and dried and messages
  • 1/2 cup Vegan Parmesan Cheese
  • 1/2 cup Croutons, of choice
  • Black Pepper
  • Sliced Green Olives, optional
  • 1/2 cup Caesar Dressing


Simple Vegan Kale Caesar Salad

  1. Wash the kale and romaine lettuce under cool water and dry with paper towels or a salad spinner. 
  2. Cut the romaine lettuce into bite size pieces.
  3. Message the kale with your hands and cut into bite size pieces.
  4. Add the kale and lettuce to a large salad bowl and add the vegan parmesan cheese, croutons, black pepper and (optional) sliced green olives to replace anchovies. 
  5. Add Caesar Dressing of choice or (Easy Delicious Eggless Vegan Caesar Dressing you can find on this website)
  6. Toss all together and serve.
