First, as always, lets look at a little history on broccoli. It’s so fun to see where and what facts our food came from.
A Little History On Broccoli
Most people love broccoli but it is hard to believe that it comes from the bitter family of the wild mustard plant. Two types of broccoli derived from this plant, the calabrese or better known as the ironman and the sprouting broccoli known as the cardinal.
Broccoli was cultivated by Italian farmers more then 2,000 years ago. Like the beautiful artichoke, broccoli is a large edible flower botanically known as brassica oleracea italica. It is a native of the Mediterranean but cleverly engineered from the cabbage by the Etruscans. This ancient Italian culture was considered to be the ingenious horticulturists of their time. The Italians called it broccolo meaning ‘the flowering crest of the cabbage‘.

It was very highly regarded in the times of the Roman Empire particularly by Drusus Caesar, son of the Emperor Tiberius. It had been reported that Drusus ate nothing but broccoli for an entire month. That is a serious love relationship!
Commercial cultivation of this flower vegetable dates back to the 1500’s. Although, it didn’t become popular in the United States until the 1920’s when the Southern Italian Immigrants brought it over with them.

Today you can find it in most households as a common side dish or mingled in with other foods. It can be cooked in many ways as well as eaten raw. How To Make Simple Air Fryer Curry Coriander Broccoli
I make this Simple Air Fryer Curry Coriander Broccoli in a quick three step process. First everyone must clean their vegetables. So do that with cool water and rub the top of the flower with your hands gently to get any residue off. Then pat it dry with a paper towel or kitchen towel.

Cut the broccoli into large bit size pieces with a little stem on them. This way they can be used for dipping. Put them in a large bowl and spray with olive oil until coated lightly or 3 tablespoons of olive oil. Toss with your hands or a large wooden spoon to coat.

Then add a sprinkle of coriander and yellow curry powder. Do this and toss the broccoli bits around to help coat them. Sprinkle them some more with the coriander and yellow curry. Use about 2 teaspoons worth of spices. Then put them into the air fryer. Lay them down so that most of them are laying on the surface of the bowl of the fryer. Sprinkle with salt if desired.

Cook the broccoli bits at 370 degrees for 8 minutes. Check after 6 minutes to make sure they are not over cooked. You want them to be a little firm. When done they are ready to eat.

Serve with your favorite French dressing or by themselves.

Thank you! Not sure how it will do in a bread maker. It may come out heavy and dense since you’d have to put a slit in it so as it can spread and expand better.
