History Of Cinnamon
Cinnamon is so delicious that it has been widely consumed by people as early as 3000 BC. It is also mentioned in writings going back to 4000 BC in Chinese writings. This makes cinnamon one of the worlds oldest spices. In these ancient times it was commonly used by the Egyptians for embalming, antibacterial properties as well a symbol of status and luxury spice. It was often used in this time period as a perfume or medicine.
To identify cinnamon it is known as a bushy evergreen tree from the laurel family of the genus Cinnamomum, in which the spice is created by it’s bark. The bark is harvested every two to three years. It is taken as the dried inner bark, brown in color and with a warm sweet fragrance. Growers harvest the cinnamon crop in wet seasons, cutting thin shoots off the tree close to the ground. These shoots are split with a knife, peeled, telescoped into one another forming quills about 42 inches long. After four to five days the quills are dried, rolled, tightened and placed in subdued sunlight to dry. They are then finished with being bleached in sulfur dioxide to be further sorted by grade.

Today cinnamon is used in all sorts of baking, culinary dishes, perfume, essential oils and potpourri. Although, there are further studies pushing the potentials of cinnamon into medicines such as neutraceutical and neuroprotectives and for probiotic properties. These are all wonderful discoveries and I for one love it’s taste and smell. Let’s see in time how far this wonderful ancient spice will evolve.
How To Make Rich Dark Cinnamon Syrup
This recipe was truly made by a mistake and it was a fabulous tasty one. The great thing is that it takes no time to make it. This is a syrup that can be made in the spur of the moment.
Take a medium sauce pan and put it on a stove top burner on medium heat. Add the water, coconut sugar, ground cinnamon, vanilla flavoring, and salt. You can add butter for a richer tasting syrup, but I make it mostly without it. (It’s all up to how you want it to taste). With a wooden spoon stir the mixture for four minutes or until all the sugar is dissolved. The sauce will be bubbly hot. After four minutes the sauce will be ready to serve.

What To Serve Rich Dark Cinnamon Syrup On
Of course when thinking about syrup we always think about all the common dishes to add them too like pancakes (like my Vegan Coconut Cornmeal Pancakes topped with Vegan Dark Coconut Sugar Candied Walnuts) and french toast. Although, I have found that this syrup is also wonderful on roasted vegetables like acorn squash, butternut squash, sweet potatoes and pumpkin dishes. Perfect on sweet pumpkin desserts and pies that have cinnamon spice in them. Of course ice cream is always a favorite to put flavored syrups on as well.




It isn’t all that unusual to put cinnamon flavors in chocolate desserts, but it’s extra special to put this syrup on them. I love it on brownies, flourless chocolate cakes, mousse and even in hot chocolate because it gives it that little extra punch in cinnamon and sweetness.


I can think of a lot of different desserts and pies that this syrup would go great on, like hot syrup on pumpkin pie, sweet potato pie and gingerbread. You could even use it as a sweetener in coffee or chia tea. The sky is the limit when thinking about the possibilities of what this Rich Dark Cinnamon Syrup will go great on.

Ingredients
Rich Dark Cinnamon Syrup
- 1 cup Coconut Sugar
- 1 1/2 cups Water
- 1 Tbsp Vegan Butter (optional)
- 1 1/2 tsp Ground Cinnamon
- 1 1/2 tsp Vanilla Extract
- 1/3 tsp Sea Salt or Pink Himalayan Salt
Instructions
Rich Dark Cinnamon Syrup
- In a medium sauce pan on medium heat add all the ingredients. Stir continuously for 4 minutes or until all the coconut sugar has dissolved.
- Your sauce is ready.
- Serve hot or store in the refrigerator in a sealed container for up to 3 to 4 days.
Notes
- Reheat over low heat to return to a warm syrup type sauce. Watch close so as not to burn and stir often.
- Store in a air tight contain for up to one week in the refrigerator.
