A Little History On Radishes

We know of the everyday radish as a beautiful bright red bulb root that is grown in every novices garden. Likely being so because it only takes 25 to 60 days to harvest. Very rewarding for anyone to pull fresh produce from the garden so fast and ready to eat.

The radish is an interesting root vegetable that is from the mustard family or rather known as a crucifereae. The Greeks changed the latin word for radishes from Raphanus to rephanos, meaning ‘easily reared.’ The Greeks loved the radish so much they made small gold replicas of it. Cute, but true!

Not only was it loved by the Greeks it was sought after by most of Europe and Egypt. By 1629 it was one of the first European crops to be introduced by the Spaniards to America. So let’s look back for a second to where did it come from? Originally this little gem came from China. Were there are still radishes that grow in the wild there today.

Nutritional Value Of Radishes

When I think of radishes I think of them as just being an extra colorful quasi hot vegetable on my salad. Little did we know that 85g of radishes only has 15 calories with 30% RDA of vitamin C and a nice amount of 20% calcium. They are also rich in a ascorbic acid.

Radishes are surprisingly helpful for people suffering from liver troubles, jaundice, enlarged spleen, hemorrhoids and gallbladder ailments. These little red beauties come in pink, white and also black. The black radishes are known for contain polyphenols that help with prevention and treatment of cancer and vascular and cardiac disease. Quite a big punch for such a little vegetable.

How To Make Quick Summertime Spicy Radish Salsa

This recipe became a very meditative process. I like my radishes to look a little unison in size so I sliced them into quarters and sliced them thin. You only need about 8 medium radishes for this recipe so it was quite fun. Each to their own!

If you want them a little more chunky then just chop them up a little small and throw them into the food processor with all the other ingredients. (I love my Hamilton Beach Food Processor) Pulse the food processor a couple of times until you get the consistency you like. It should be about 4 to 6 times.

Make sure to push the ingredient’s down off of the sides of the food processor to help mingle in larger pieces. Then presto! It’s ready to eat!

What To Eat Spicy Radish Salsa With

Radishes have always been that extra raw vegetable on the side of your plate or on salads. Although, as a salsa it’s surprisingly different and goes with more dishes.

It’s wonderful as a dip served with chips and thats a given cause it’s called salsa. Let’s think of it on another level. Like putting it in sandwiches, on top of a salad as extra flavoring, in vegan fish tacos, veggie tacos, burritos bowls, Buddha bowls, spring rolls, a side with vegan sushi rolls, on a vegan cream cheese bagel, spicy bean dishes, add with meals you would eat kimchi with.

Quick Summertime Spicy Radish Salsa

  • 8 to 10 medium to large Radishes, scrubbed and stems removed
  • 2 cloves Garlic, crushed and chopped
  • 1 Jalapeño, sliced thin, seeds and ribs removed, unless you want more heat add the seeds
  • 1 Tbsp Fresh Lemon Juice, make sure it’s not a sweet lemon
  • 1 handful of Cilantro, chopped
  • Sea Salt to taste
  • Black Pepper to taste


Instructions

Quick Summertime Spicy Radish Salsa

  1. Cut the green ends and stems off of the radishes and scrub them with a vegetable brush under cold water. Chop them into thin slices and put into a food processor.
  2. Add the crushed chopped garlic cloves, sliced thin jalapeño, fresh lemon juice, cilantro and sea salt and black pepper.
  3. Pulse the Food Processor ( I use Hamilton Beach Food Processor) twice and then open to push the salsa down off of the sides with a scraper. Pulse again 2 to 3 more times until it is the desired texture.
  4. Ready to serve. Enjoy!

Notes

  • Salsa will keep for 3 days in an air tight container in the refrigerator.
  • Do not add any sweeteners. It will diminish the spice and soften the radishes unless that is what you want.
