If you have people who are sensitive to spice then just add a little apricot jam to the pepper jelly as to not to dilute the flavor of the apricots.

As always, first lets explore the history of apricots.

History Of Apricots

Who doesn’t love the slightly sour sweet tang of an apricot? It’s flesh is so soft, and easy to get the pit out. Truly a fleshy meaty delicious fruit. We can also love them because they are a member of the rose family. Beautiful!

It is questionable as to where the apricot first originated. Some sources say they came from China some 5,000 to 6,000 years ago, others say they came from Russia, but the most variety of apricot species comes from Armenia. Perhaps this is the original home of the fruit.

Regardless of where the apricot came from they became popular to grow. Apricot trees are self-pollenating with a large harvest of fruit. Being that the tree can withstand harsh weather, in it’s early day, it made it’s way to Pakistan, Iran and Turkey. A single tree can produce fruit for up to 25 years. Now as we know, the apricot is a world traveler and can be found on most continents.

As for it’s nutritional value it is a golden ticket, because they are loaded with Beta-Carotene, which is a super powerful antioxidant. Apricots are also an excellent source of vitamin C, E, and B6 as well as magnesium, phosphorus, calcium and potassium. Let’s not forget the fact that they are loaded with fiber.

My New Favorite Vegan Cream Cheese

I just discovered this amazing plant based vegan cream cheese called WayFare. It is made here in the great North West out of Montana . So I am not sure how it is distributed amongst our United States. If you can find it it is well worth it.

This is a photo of cutting board with sliced apricots, 3 bagels, 2 spreading knives, WayFare cream cheese and a white bowl of pepper jelly all on an earth tone place mat with fresh apricots stacked at the end of the cutting board on the mat.

Surprisingly, the base of this cream cheese is made with butter beans and oats. These beans add 1 gram of protein per 2 tablespoons. Very nice! Most cream cheese has no protein. So another plus for this brand.

Also the texture is fantastic! It truly is like cream cheese. It spreads like cream cheese as well. No lumpy grainy texture here. Thumbs up again!

This is a photo of the side information of the brand WayFare cream cheese with a list of 8 allergen free certifications.

Plus it is free from the top 8 allergens. As you can see in this photo. So give it a try and let me know how you like it. I know we will continue to get this brand when we can find it.

How To Make Pepper Jelly Apricot Cream Cheese Grilled Bagel

Honestly who doesn’t like a bagel with cream cheese on it? Right? I bought apricots and thought what would I do with them. Well I went into the pantry to get something and spotted some wonderful pepper jelly I had. Then I began to think I bet that would go great with cream cheese on a bagel with the apricots.

I made a test run and tested it out on my honey and he loved it. He likes spice so this was a hit.

So start by cutting a bagel in half and butter up the cut side and grill it in a cast iron skillet ( I use American Made Lodge Cast Iron Skillets). I like mine just toasted a little medium brown. I then let it cool for a minute or so because as you know if you spread cream cheese on a bagel while it is hot it separates and is hard to spread.

Then after the cream cheese I added the pepper jelly and sliced apricots. I found that if I cut the apricot in have and extracted the pit then I still had enough apricot flesh to slice in half one more time. This gave enough apricot to give a bolder flavor. Apricots aren’t always super strong in flavor so this works out wonderfully.
