Hence, this sea traveling brought in the early modern era of the 18th century an opportunity for the colonists and Native American Indians to plant this wonderful food staple.

Picking Out A Good Head Of Green Cabbage
I long for the day when you could go the grocery store and there were beautifully full plush heads of green cabbage. I grew up on a farm and I know that what we find in the store today is not fresh from the garden.

When you are lookig for a good head of cabbage make sure it’s not soft and spongy to squeeze. Better yet make sure the leafs can’t be easily rolled back with your fingers, like they are limp and falling away from the head of cabbage. You want a firm heavy cabbage with tight leaves on it. The best ones are the ones with dark leaves. These are very fresh cabbages.
How To Make Inexpensive Vegan Fried Cabbage And Green Onions
When making this Inexpensive Vegan Fried Cabbage And Green Onions I first discard any beat up or old leaves around the cabbage. Then I wash it under cold water pat it dry with a kitchen towel. I continue to the cutting board to chop it up into 1 inch cubes. Do the same with the green onions making sure to get rid of any old wimpy tales and trim the ends off.
Heat a large skillet (I use American made Lodge Cast Iron Skillets) and add the olive oil. Add the cabbage and toss it in the oil until coated. If your cabbage is large you may need more olive oil. You will know when it is cooking it will burn a little. Just add more oil and toss it more often.


Add the chopped 1 inch green onions, rosemary and onion salt. I like Trader Joe’s onion salt because it has chives in it. It has a very full flavor. Toss it all together and continue to cook on medium heat for about 5 minutes or until the cabbage is a starting to turn a little brown when you flip it. This is when you put the lid on turn the temperature down to medium low because the steam from the cabbage will help cook it. Take the lid off every couple of minute to toss it and flip it. When the cabbage is wilted transfer it to a dish with a cover to keep it warm.

Ingredients
Inexpensive Vegan Fried Cabbage And Green Onions
- 1 medium head of Green Cabbage
- 9 to 10 Green Onions
- 2 Tbsp Olive Oil (more if needed if you have a larger cabbage)
- 1/4 to 1/2 tsp dried Rosemary ( rosemary is strong in flavor use only 1/4 if you are not use to it)
- 1/2 tsp Onion Salt
Instructions

- Wash the cabbage under cool water and pat dry with a clean kitchen towel. Cut into 1 inch chunk size pieces.
- Clean the green onions under cool water and discard any bad green ends and cut off the roots. Cut into 1 inch long pieces.
- Heat a skillet ( I use American Made Lodge Cast Iron Skillets) on medium heat and add the olive oil.
- Add the chopped cabbage and toss around in the olive oil until the cabbage is covered. Then add the chopped green onions and toss in with the cabbage. Add the rosemary and onion powder ( I like Trader Joe’s onion salt because it has bits of chives in it). Toss to coat the cabbage with the spices. Cook for about 5 minutes or until the cabbage gets slightly brown when you turn it over. Turn the heat down to medium low if it is burning. Cover with a lid and this will help the water from the cabbage to steam it. Take the lid off and flip the cabbage every so often. Return the lid when you are done flipping. The cabbage will be done when it starts to look a little wilted.
- Put the cabbage in a dish when done or the skillet will continue to cook it. Put a lid on the dish until ready to serve.
