Easy Inexpensive Dairy Free And Eggless Banana Bread

This Inexpensive Dairy Free Banana Bread is exactly what it is… Easy! Just mix all the dry ingredients in one bowl and wet in another. Add the dry ingredients to the wet ingredients, mix and pour into a loaf pan. Bake and it’s ready in less than an hour. Loving the cinnamon and sweet topping. Delicious! Perfect breakfast add on, great for lunch or snack or after dinner dessert for the whole family. Let the kids get involved with the mashing of the bananas. They love that part.

A Little History On Banana Bread

Most everyone loves the sweet taste of banana bread. It’s hard to believe that is has been enjoyed since the 1930’s. In this time period house wives took to using up their house hold ingredients during the Great Depression. Even the very ripe brown bananas which were a low cost, were used up and enjoyed with spared ingredients to make banana bread.

At this time baking soda and baking powder had become a common use in baking. This helped cooking to be easier. Throwing ingredients together for a quick rise bread was a smooth addition for a busy day.

Being that bananas are available year round and inexpensive it has moved into a variety of recipes. Including recipes without milk or eggs making it an affordable item to bake (Like this recipe I have for you today). Even during the pandemic of Covid in 2020 banana bread recipes ranked as the number one recipe searched.The Delish website had over two million page views looking up banana bread during that time. Proof that banana bread is a delicious inexpensive sweet treat.

Why Does Banana Bread Have Dark Brown Lines In It?

Have you ever wondered why your banana bread has dark little lines in it? It all starts in the process of smashing the bananas. Bananas have a polyphenol oxidase which is an enzyme in the banana that catalyzes the oxidation that is naturally present of the polyphenols. This will make your bread look darker.

Plus, banana cells carry amyloplasts which contain starches. When certain chemicals are exposed to these cells they turn the starches black. Being that bananas are acidic they react with creating black specks when they are exposed to baking soda. Hence this is how the dark brown lines are created in your banana bread.

How To Make Inexpensive Dairy Free Banana Bread

Banana bread is a wonderful way to use up those over ripe bananas because that is exactly what is needed for this recipe. So, first preheat your oven to 350 degrees. Line your 9 X 5 loaf pan with parchment paper or grease the pan.

Take three ripe bananas and smash them with the back of a fork in a large bowl until they are mushy. Then melt coconut oil on the stove top or in the microwave until it is has turned to liquid form. Pour it in with the mashed bananas and mix together well.

Then warm the milk either on the stove or in the microwave so that it doesn’t harden the coconut oil. Pour the warm milk, coconut sugar or brown sugar and vanilla extract in with the banana mixture and mix together.

In a separate large bowl add the organic all-purpose flour, baking soda, cinnamon and salt. Whisk the dry ingredients all together. Add the dry ingredients to the wet ingredients. Do not over mix them together. Mix until they are just combined.

Add the mixture to the prepared 9 X 5 loaf pan. Spread out the top evenly and shake down a little to spread it out. Top the top with a little sprinkle of brown sugar or coconut sugar and cinnamon, if desired.

Put the loaf pan in the oven and bake for 50 to 60 minutes or until a toothpick inserted in the middle comes out clean. When done let the bread set in the loaf pan to cool for 10 minutes. Then transfer it out of the pan and onto a cooling rake. Completely cool before cutting.

Inexpensive Dairy Free Banana Bread

  • 3 ripe Bananas, mashed
  • 1/3 cup melted Coconut Oil (or Organic Vegetable Oil)
  • 1/2 cup Coconut Sugar (or Brown Sugar)
  • 1/4 cup non-dairy milk, I used Coconut Milk (or Almond, Oat or Soy)
  • 1 1/4 tsp Vanilla Extract
  • 1 1/4 tsp Baking Soda
  • 1/2 tsp Salt ( I use Pink Himalayan Salt)
  • 1 tsp Cinnamon
  • 1 1/2 cups All-Purpose Organic Flour


Instructions

  1. Preheat oven to 350 degrees
  2. Grease a 9 X5 inch loaf pan or line the pan with parchment paper.
  3. In a large bowl mash the bananas until mushy and smooth. Melt the coconut oil and stir it into the mashed bananas. 
  4. Warm the milk in the microwave or stove top in a pan so as no to harden the coconut oil. Add it to the banana mixture along with the brown sugar or coconut sugar and vanilla extract. Mix together well.
  5. In another large bowl add together the flour, salt, baking soda and cinnamon. Whisk all together.
  6. Add the dry mixture into the wet ingredients slowly. Mixing until it’s just combined. Don’t over mix. 
  7. Pour the batter into the prepared 9 X 5 pan and smooth out the top to be even. Shack the pan a little to help flatten it. 
  8. If desired, add a sprinkle of coconut sugar or brown sugar to the top along with a sprinkle of cinnamon. 
  9. Bake for 50 to 60 minutes, or until a toothpick inserted in the middle comes out clean. 
  10. Let the bread cool in the loaf pan for 10 minutes before transferring it to a bakers cooling rack
  11. Completely cool before cutting. 
  12. Enjoy!

  1. This banana bread is so good it doesn’t even seem vegan. The loaf comes out soft and moist! Not to mention the flavors are rich and mouthwatering! 10/10 recommend this or the chocolate chip banana bread be a staple in your house!
