This pudding is wonderfully packed full of nutrients, antioxidants and protein making it an ideal add on to your diet. Beautiful tasty dessert for any time of the year and for Holidays. It is an especially good choice for children that struggle when eating their vegetables. Make a double batch cause it will go quick.

A Little History On Sweet Potatoes

Most everyone loves sweet potatoes. They are the perfect side dish for most winter holidays. Although, it is hard to believe that they have been around for 400 years before Christopher Columbus. Some say that it even dates back to 750 BCE in Peru. Another source says that the sweet potato has been carbon dated back to 1000 A.D. in the Cook Islands. I’ll go with the fact that it came from South America in the tropics where it was a source of food for over 5,000 years.

The sweet potato was so delicious that Christopher Columbus brought the root vegetable back to Spain. Shortly after it was the craze all over Europe. This sweet vegetable was consider a nutritious food. It was roasted or infused with wine, boiled with prunes and was even roasted with vinegar, oil and salt.

Some said it gave the body strength and lust. Hence, it was sought after by royalty, like Henry the VIII who especially loved his spiced sweet potato pie. Again proclaimed theories were spread in the 16th Century by aristocrats claiming it to be an aphrodisiac. This collective encouragement soon made the sweet potato very popular by many. As we can see why so many people loved sweet potatoes.

How The Sweet Potato Came Up With It’s Name

As history goes the sweet potato was cultivated and eaten before the notorious Irish white potatoes. So people first called the sweet potato a “potato” before the white potato. Being that as it may, recipes were confusing on what potato was being talked about when reading recipes. So the American colonists were the first to label the term of “sweet potato” to the orangish root vegetable and to call the Irish white potatoes “potatoes“.

Where I First Encountered This Sweet Potato Pudding

I for one love sweet potatoes and eat them nearly every week to a couple times a week. I find it to be very versatile and complimentary to add spices to or add to dishes. It is a very interesting concept to add it to the recipe I have for you today. It is truly a wonderful tasty blend when adding it as the foundation to chocolate pudding. Being that they are sweet it really works well and it is hard to believe that it is mostly sweet potato in this Healthy Rich Chocolate Sweet Potato Pudding.

I got this recipe from my step daughter who shared it with me. She down loaded it from a website by Gourmande in the Kitchen. I tried it and to my amazement, it was wonderful! I find that the richer the chocolate protein powder the better the pudding. Adding a little more salt and vanilla also boosted the flavors. I have also tried cayenne pepper and cinnamon before and it was also great as well. I’m sure you have your favorite protein powder and way of making this pudding. So give it a try!

How To Bake The Sweet Potatoes For Healthy Rich Sweet Potato Pudding

The first thing to do is bake your sweet potatoes. Preheat your oven to 400 degrees. Scrub the sweet potatoes with a vegetable brush and pat them dry. Stab them with a fork 3 to 4 times. Place the sweet potatoes directly on the rack in the oven. Place tin foil under them because they may drip. Bake for 35 minutes or until soft to squeeze.

Test the sweet potatoes with a fork to see if they are done. If it goes easily through then they are done. If not then return to the oven for 5 to 10 more minutes to cook. Remove form the oven when done cool until they are warm and easy to handle.

How To Make Healthy Rich Chocolate Sweet Potato Pudding

While the sweet potatoes are cooking check your dates to see if they are hard. If they are then soak them in hot water for 5 to10 minutes. If they are really soft then you can skip this part. Make sure all the date pits are removed before adding them into the blender.

Cut the warm sweet potatoes in half length wise, because it is easier to scoop out the flesh of the vegetable this way. Add it to the blender ( I use the Ninja BL770 Mega Kitchen System) with the coconut milk, vanilla extract, soaked drained, pitted dates (if they need to be soaked) and salt. Blend until smooth. Scrap down the sides and add the cocoa powder and the chocolate protein powder. Blend again until smooth and continue to scrap the sides when needed.

Pour the pudding into serving dishes and put into the refrigerator for a couple of hours before serving. Top with vegan whip cream if desired.

Healthy Rich Chocolate Sweet Potato Pudding

  • 2 medium Sweet Potatoes
  • 1 cup Coconut Milk (full fat or light)
  • 5 Madjool Dates, soft and pitted (soaked in warm to hot water if they are hard for 5 to 10 minutes to soften)
  • 1 1/2 tsp Vanilla Extract
  • 1/2 cup and 1 tbsp cocoa powder
  • 2 scoops of Chocolate Protein Powder
  • 2 pinches of salt


Instructions

Healthy Rich Chocolate Sweet Potato Pudding

  1. Preheat oven to 400 degrees. Wash the sweet potatoes and pat dry. Stab the sweet potato with an knife 3 to 4 times or with a fork. Place the sweet potato directly on the rack on the oven and place tin foil under it because it may drip. Bake for 35 minutes or until soft to squeeze. Test with a knife if it easily goes through. If it is not done then return to the oven for 5 to 10 minutes. Remove from the oven when done and cool until it is still warm and easy to handle to peal.
  2. Cut the sweet potatoes in half length wise and scoop out the potato from the skins.
  3. Put the cut out sweet potato into a blender ( I use Ninja BL770 Mega Kitchen System) with the coconut milk, vanilla extract, dates, and salt. Blend on high speed until very creamy.
  4. Scrape down the sides and add the cocoa powder and chocolate protein powder and blend again until very smooth. Scrape down the sides and blend one last time.
  5. Pour the mixture into serving dishes, chill in the refrigerator for 2 hours.
  6. Enjoy!
