A Little Granola History
Granola has been around for about 150 years. Hard to believe but it’s true. It was first invented in 1863 by James Caleb Jackson as a dry breakfast cereal he called granula, at his sanitarium health spa in upstate New York. He baked graham flour until they were brittle cakes. After he crumbled them he baked them again.
Later it was recreated by John Harvey Kellogg of Kellogg’s cereal. He made it with cornmeal, wheat flour and oatmeal. After this creation John Harvey Kellogg was sued by Jackson. Kellogg’s recipe changed the name to granola. By 1899 Kellogg’s was selling a whomping four tons of this crunchy golden cereal a month.

By the 1960’s granola fell off of it’s pedestal and was hardly heard of. Although, thanks to Layton Gentry granola made a major comeback. His amazing new recipe helped him sell the rights of it to a modern granola company. Making this granola recipe to hit it big again as one of America’s golden breakfast foods.
Every since then granola has had many face lifts of flavors. Many of them amazing and still selling like crazy. Although, prices have sky rocketed for this loved cereal. Fortunately, we can make this deliciousness at home and it is so easy. How To Make Easy Vegan High Protein Nutty Granola
As usual the first thing to do is preheat your oven to 325F.
Then the best way to make this granola is by putting all the dry ingredients into a large bowl. (Do not add any dried fruit) Mix that together really well.

Heat the coconut oil in the microwave or stove top in a pan. Add it to the dry mixture. In a small bowl measure out the maple syrup and vanilla and mix well. Then pour it over the dry mixture and mix it all together well with a large wooden spoon.
Add the mixture onto a parchment lined sheet pan (You may need two sheet pans for this). Spread it out so that it is thin over the parchment paper (Like the photo below). Bake it on the middle rack for 10 minutes.

Take the baked granola out of the oven and flip it and mix it up. Press it down with the back of a spatula to flatten it together. This will help it all stick together into chunks when it is done baking. Put it back into the oven and continue baking for another 10 to 12 minutes or until golden brown.

When it is done let it rest on the counter top to completely cool. This will help it stay a little chunky.
How To Make Varieties With This Granola Recipe
This recipe can be made with a variety of nuts. Just mix them out according to what you want to use. Make sure it equals a 1 1/2 cups.
You can also use sunflower seeds instead of pumpkin or a mixture of these two. Plus, you can mix up the hemps seeds and use chia seeds, flax seeds or sesame seeds.

As for the cardamom. You can add or substitute it with nutmeg, clove or allspice. You can even make a mixture of all off these. Just use the clove and nutmeg very sparingly because it is very strong.
You can also sub-out the vanilla flavoring for maple or almond flavoring or half vanilla and use the other half maple or almond. (Depending on what nuts you use) There are no rules for this recipe.
As for dried fruit, you can add 1 cup of dried cherries, cranberries, dates, apricots, raisins, peaches, mango, banana, currants or figs. (Add after the granola has been baked and cooled)

Ingredients
Easy Vegan High Protein Nutty Granola
- 2 cups of Organic Sprouted Oatmeal
- 1 1/2 cups of Walnuts, Pecans and Hazelnuts
- 1 cup Pumpkin Seeds
- 1 cup Large Flacked Coconut, not grated or sweetened
- 1/2 cup Hemp Seeds
- 1 1/2 tsp Cinnamon
- 1/2 tsp Cardamom
- 1/2 tsp Sea Salt
- 1/3 cup Organic Coconut Oil, melted
- 1/3 cup Organic Maple Syrup
- 1 tsp Vanilla
Instructions
Easy Vegan High Protein Nutty Granola
- Preheat oven to 325F
- In a large bowl add all the dry ingredients (except any dried fruit). Mix together well. Melt the coconut oil and add it to the dry mixture. In a small bowl add together the maple syrup and vanilla mix and add to the dry granola mixture. Mix together well with a large wooden spoon.
- Add the the granola mixture to a baking sheet pan lined with parchment paper.
- Place the sheet pan on the middle rack in the oven. Bake for 10 minutes.
- After ten minutes stir and flip the granola mixture and press it flat onto the sheet pan with the back of a spatula. This flattening will help it clump up.
- Put back into the oven and continue baking for 10 to 12 minutes or until golden brown.
- When done let it cool down completely. Break it into clusters and add any dried fruit you would like in it.
- Store in an air tight container or jar with a lid. Store in the pantry or counter top.
Notes
Add 1 cup of any dried fruit to the baked granola after it has been baked and cooled.
