Top with a sprinkle of powdered sugar or my Salted Coconut Cream and it’s fall festivities are in your mouth. Make this recipe with your little ones. They can do the stirring. Before the how to make instructions I like to write a little history on the topic I’m writing about. I hope you like this section of the blog. It’s always fun to explore the past and learn about the history of food.
A Little History On Gingerbread
History has it that gingerbread dates back all the way to the ancient Egyptians. They used it for ceremonial purposes. This delicious tasty cake was later admired by the Greeks and they created the first recipe for it around 2400 B.C.
Apparently, the word gingerbread came from the Old French called “gigembras,” which when translated meant “gingered food.” Late around 1150 to 1450 A.D. the Middle English called it “gyngerbread,” and that later evolved into the gingerbread that we know of today.

To the wealthy Europeans, trade became a rich mans hungry palate and spices such as ginger were highly favored. The idea of gingerbread created a thunder of recipes. The early Europeans created a variety of these recipes by mixing stale breadcrumbs with rosewater, sugar, ground almonds and ginger.
Today we enjoy this sweet treat with a variety of spices that can vary in many recipes. Plus, it can be sweetened with combining ginger with molasses, honey, treacle or even simple sweeteners like brown sugar and coconut sugar.

How To Make Easy Vegan Gingerbread Cake Bars
When making these Easy Vegan Gingerbread Cake Bars I first preheat the oven to 350 degrees. Next prepare a 9 X 13 cake pan and line it with parchment paper.
In a large bowl sift all the dry ingredients together. I like to do this so that there are no chunks of heavy tasting spice. It’s not very pleasant to get a mouth full of spicy ginger or allspice when your least expecting it.


In a small bowl prepare your flax egg. Add 3 tablespoons of water to 1 tablespoon of ground flaxseed. Mix it together with a fork and let sit to congeal. It will take about 5 minutes.
After 5 minutes add the flax egg, plant based milk, vanilla extract, melted vegan butter and apple cider vinegar to the dry ingredients. With a whisk or large wooden spoon mix it all together, but don’t over mix it. When finished pour it into the prepared 9 X 13 baking pan. Spread it out evenly with the back of a spoon.

Put it in the preheated oven and bake for 20 to 24 minutes (Cooking time all depends on your oven and altitude). Check to see if it is done with a toothpick. When it comes out clean it is done. Let the cake cool before transferring it to a wire rack.
Toppings For Your Gingerbread Cake Bars
When it is completely cooled top the whole layer of single cake bars with a light dusting of powdered sugar through a sieve or cover in your favorite frosting. Although, they are perfectly delicious just on their own, it all depends on how you like your gingerbread cake bars. Cut the cake bars into desired size. Makes up to 12 servings.

Ingredients
Easy Vegan Gingerbread Cake Bars
- 2 cups Organic All Purpose Flour
- 1 cup Dark Brown Sugar or Organic Coconut Sugar
- 1 tsp Baking Soda
- 1/2 tsp Sea Salt
- 1 1/2 tsp Ground Ginger
- 1 1/4 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Allspice
- 1 Flax Egg, 1 Tbsp Ground Flaxseed and 3 Tbsp Water (mix together to congeal)
- 3/4 cup Coconut Milk or Almond Milk
- 1 1/4 tsp Vanilla Extract
- 1/4 cup Unsulphured Molasses
- 1/3 cup Melted Vegan Butter
- 1 Tbsp Apple Cider Vinegar
Instructions
Easy Vegan Gingerbread Cake Bars
- Preheat oven to 350 degrees.Line bottom of 9 X 13 inch cake pan with parchment paper.
- Sift all the dry ingredients ( flour, brown sugar, baking soda, sea salt, ground ginger, cinnamon, nutmeg and allspice) into a large bowl.
- Make the flax egg by mixing together the ground flaxseed meal with the 3 tablespoons of water in a small bowl. (Yes, it is 1 extra Tbsp of water then most recipes) Set aside for 5 minutes to congeal.
- Add all the wet ingredients ( flax egg, coconut milk, vanilla, unsulphured molasses, melted vegan butter, and apple cider vinegar) on top of the sifted dry ingredients. Whisk or stir together with a large wooden spoon. Don’t over mix the batter.
- Pour into the prepared baking pan. Bake for 20 to 24 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool before transferring it to a wire rack.
- Top the cake with a light dusting of powdered sugar or your favorite frosting.
- Makes 12 servings
