A Little History On Caesar Dressing
As we all know Caesar Salad is a much loved salad for it’s robust flavors and cheese. Most people think of it as a salad that comes with chicken, but it was not originated with chicken to come with it. The only meat in this salad were little fish in the dressing. Most people love the unami richness of the taste and people are shocked that there are anchovies in it making a salty perfect paste.
Caesar dressing is not a skinny mini dressing to consume. It’s loaded with mayonnaise and egg yoke. Definitely not on the lighter side of low calorie, but it really adds for a thick, rich dressing that sticks to your veggies and to your ribs. It is a dressing to watch for being high in cholesterol as well.
With all this lushness in running a creamy dressing over your lettuce one would assume that the Roman Emperor made it himself. Although, to much of a surprise it wasn’t! It was created on the 4th of July in 1924 by an Italian immigrant named Caesar Cardini. Cardini was living in San Diego but moved his restaurant to Tijuana, Mexico during prohibition so he could serve alcohol. His restaurant was called Caesar’s and was right on the Mexico and American boarded. People frequented the restaurant so much that he often ran out of food.
At the end of prohibition in 1935 Cardi moved back to the United States and moved to Las Angeles to work as a liquor merchant. Not only was he popular with his liquor business, but he stated to market his Caesar Dressing. Needless to say, of course it became a hit!

The First Recipe For Caesar Dressing By Caesar Cardini
The original Caesar Salad recipe by Caesar Cardin had romaine lettuce, 1 coddled egg yolk, 1 lime, 1 1/2 tsp Worchestershire sauce, 1 tsp black pepper, 1/2 cup extra virgin oil, 2 Tbsp of freshly grated parmigiano-reggiano cheese, 2 slices of toasted baguette.

Sounds all so rich and delicious but the Caesar Dressing I make for you today is vegan. Not something that was being thought about back in 1924 or even after prohibition in 1035.
It still has that wonderful unami flavoring with adding soy sauce and nutritional yeast instead of anchovies. This truly make for a signature Caesar Dressing copy cat. How To Make Easy Delicious Vegan Caesar Dressing
When I make this homemade Caesar dressing I make sure to have everything fresh. Like fresh lemon juice, my favorite dijon mustard and a great quality extra virgin olive oil. Some people crush their garlic but I like to crush it and chop it up really fine. Then I add all the ingredients into a fast smoothie blender to get it really smooth or you can use a blender. (I use Ninja BL770 Mega Kitchen System)

If you find that it may be a little bitter add the olive oil after you have blended it to the consistency that you want it to be. Then add the olive oil and blend it just enough to mix it in. Sometimes the polyphenols in the olive oil can separate and cause a bitter taste.

This Easy Delicious Eggless Vegan Caesar Dressing is full of wonderful restored traditional flavors. The traditional recipe has anchovies and because this recipe is vegan it has been replaced. The wonderful unami flavor that takes over the use of anchovies in this recipe is soy sauce and nutritional yeast. Plus, lets not forget the use of eggs normally in this dressing. I am using an eggless vegan mayonnaise that works amazingly in this recipe. It is thick and clings perfectly to the romaine lettuce. I hope you love this recipe as much as we do. Enjoy!
Ingredients
Easy Delicious Eggless Vegan Caesar Dressing
- 1/2 cup Vegan Mayonnaise (I use egg-free Follow Your Heart Original Veganaise)
- 2 Tbsp Nutritional Yeast
- 2 Tbsp Fresh Lemon Juice
- 1 Tbsp Dijon Mustard
- 1 Tbsp Maple Syrup or Agave Nectar Syrup
- 1 Tbsp Soy Sauce
- 1 Tbsp Extra Virgin Olive Oil
- 2 1/2 tsp Capers
- 2 tsp Crushed Garlic
- 1/2 tsp Distilled White Vinegar
Instructions
Easy Delicious Eggless Vegan Caesar Dressing
- In a small smoothie blender or regular blender ( I use a Ninja BL770 Mega Kitchen System) add all the ingredients. Blend until smooth and thick.
- Put into a glass container and cover with a lid. Put in the refrigerator for at least a 1/2 hour before serving.
- Makes 3 servings of about 1/4 cup.

Notes
If the dressing taste bitter. Try adding the olive oil after blending it smooth and pulse it a couple of times to blend softly.
Last 5 days in the refrigerator.
