This fun Dairy Free Nacho Green Chili Dip gives a new flair to nachos. It’s full of cheesy corn deliciousness and a little hot spice. Pump it up with Frank’s Red Hot Sauce or your favorite spicy saucy as you’d like. Pour it onto nacho corn chips, toco topper, burrito stuffer, dip or on anything that goes with cheesy corn. This recipe can be made on the hot mild side for those of you with a sensitive palate. Just follow the YouTube video and use mild green chilies and add less hot sauce. Fast and perfect to make in the flash. A dish the whole family will enjoy!

A Little History On Corn

It’s hard to believe and a surprise that 7,000 years ago corn was only about 1 inch long and a single ear plant. These tiny corns developed into a size of a pinky finger with only a handful of stony kernels. This early corn was called Balsas or known as teosinte (Genus: Zea) (Species: Z. mays) which came from a grass plant (Poaceae) in Mexico. Mexico still has this native grass today.

Looking back 10,000 years ago we can thank Southern Mexico and it’s indigenous people for first domesticating corn and selecting kernels that would populate into larger tasty cobs, as food and fuel. Becoming a major crop of our world today, feeding billions.

Native Americans took nearly 20 hours of labor to nurture a bushel of corn and today in Iowa farmers take only 6 minutes of time to produce a bushel of corn. Needless to say, corn is being mass produced leaving Iowa to be the leading state of production in America within the last 150 years with 183 bushels of corn per acre. Nationally in the USA the average is 173 bushels per acre.

Corn is mainly grown in the Midwest corn belt of Iowa, Indiana and Illinois. Creating a vast array of different species of corn for different uses, all on classification of kernel texture. Everything is grown from popping corn, flint corn, dent corn, flour corn and sweet corn.

Corn has such a massive amount of information to research and learn from. It is worth exploring to learn more about this amazing vegetable.

Nutrition Of Corn

Corn can be a healthy part of your diet as long as you don’t over due your portions. If you are diabetic you don’t have to avoid corn just eat it in moderation. It is still a starchy vegetable like peas and potatoes because it is primarily of insoluble fiber. That makes it on the low glycemic food index. It digest slowly so that it doesn’t spike in blood sugar .

Corn is very nutritious. It contains many of our B vitamins that we need. It has essential minerals, magnesium, zinc, iron, copper and manganese.

Let’s not forget that it is gluten free. Make this a go to for those of you that are gluten sensitive. Corn is so readily available in stores that it is easy to incorporate into your diet. I hope you enjoy more of this vegetable and this recipe I have made for you here today.

How To Make Dairy Free Nacho Green Chili Corn Dip

When making this Dairy Free Nacho Green Chili Corn Dip I first heat a large skillet on medium heat to melt all the ingredients in (all but the corn and hot sauce). Then I add it to a 9 X 13 inch greased baking dish to put in the oven. You can use a cast iron skillet instead and put it strait into the oven. In that case it would only need 15 minutes in the oven at 350 degrees. (I use American made Lodge Cast Iron Skillets)

So I put all the ingredients in the skillet (except the corn and hot sauce). The vegan cream cheese can take a little while to melt down but it does work out very nicely. (You can soften it in the microwave. I choose not to in the video as I don’t use the microwave only if I have to.)

Melt it all together until well blended and then add the corn and hot sauce. Taste the sauce to see if it needs more black pepper or Frank’s Red Hot Sauce. Add extra in if needed. You can use your own favorite hot sauce if you’d like. I like Frank’s Red Hot Sauce because it’s vegan.

Pour the mixture into an oiled 9 X 13 inch baking dish and put it in the oven. Cook at 350 degrees for 35 minutes. Serve it hot!

What To Put Dairy Free Nacho Green Chili Corn Dip On

I know the title of this recipe is for nachos but this recipe can be used as a simple hot dip with chips. It also works well on tacos as I know from personal experience. It is very good!

Pour it on vegan chili, enchilada’s, tostadas and add to your favorite burritos. Really, try it on whatever you like corn and cheese on. I bet you will come up with something amazing!

Add as much or as little hot sauce to make this a treat to all that love nachos. Top it with sliced green onions, jalapeños, more Frank’s Red Hot Sauce and red pepper flakes. Add this dip to nachos, tacos, enchiladas, tostadas and burritos.  For all those who can’t have dairy this recipe will win some hearts. Enjoy!

Dairy Free Nacho Green Chili Corn Dip

  • 2 cans 15.25 oz Whole Kernel Organic Corn, drained
  • 1 can 4.5oz Chopped Green Chiles, undrained
  • 1 cup Vegan Cream Cheese
  • 1/2 cup Vegan Sour Cream
  • 2 Tbsp Vegan Butter
  • 2 Tbsp Organic Coconut Milk (don’t add if you like it thicker)
  • 7oz Vegan Cheddar Cheese
  • 4oz Vegan Cheddar Cheese, for top of dip
  • 1/2 tsp Sea Salt
  • 1/2 tsp Ground Black Pepper, more to taste
  • 1/2 Tbsp Frank’s Red Hot Sauce, more for taste


Instructions

Dairy Free Nacho Green Chili Corn Dip

  1. Drain the corn and put into a bowl until ready to use.
  2. Pre-heat the oven to 350 degrees.
  3. Heat a large skillet and add the butter first then and add all the ingredients except the corn and hot sauce.
  4. When everything has melted down to a sauce add the corn and hot sauce. Taste to see if it needs any more black pepper, sea salt or Frank’s Red Hot Sauce.  Mix it all together well.
  5. Add the dip to a 9 X 13 greased baking dish.
  6. Top with 4oz of vegan cheddar cheese.
  7. Put it in the oven for 35 minutes.
  8. Serve hot on nachos out of the oven or as a dip.
  9. Top with Sliced green onion, sliced jalapeños, extra hot sauce and red pepper flakes if desired.
  10. Enjoy!
