A Refreshing Easy Fresh Fruit Salad

Enjoy this beautiful Blueberry Peach Summer Salad with all the bounty of summer fruit and berries. It is so refreshing and light for those hot summer days. Add on my Peach Champagne Vinaigrette or your favorite summer fresh dressing and enjoy the good food that we wait for all winter long. The colors in the salad are so pretty I am sure the whole family will want some. Besides, who can pass up blueberries and peaches.

How To Make Blueberry Peach Summer Salad

First of all make sure your fruits are very fresh and in season for the best quality salad. I like to get organic blueberries and peaches. It makes a world of difference in full flavor for the salad. I like to use mixed baby greens, but I have made it with spinach or romaine lettuce before as well. They both work well, but I personally like the baby mixed greens. I use two different onions. I use the red onion for a stronger onion taste and beautiful color and the green onions for a mild onion balance that is not over powering for the fruit. I also like the english cucumbers as well. They have small seeds and a lot of flavor.

What To Put On Blueberry Peach Summer Salad

I enjoy a light vinaigrette on this salad because I don’t want it to over power the delicate flavors of the fruit. I use my Peach Champagne Vinaigrette for the topping of this salad. It is nice and light, savory, salty and a little sweet. It is thick and creamy without having to use dairy or nuts in it. The peach blends up so nice with the oil that it whips into a light creamy consistency. Perfect for clinging to your salad. I am sure a poppyseed dressing would work well also. I will try and work on a new recipe for that.

Of course this salad has to have some crunch and I prefer the roasted sunflower seeds with this combo for fruits and vegetables. Roasting the seeds really gives this salad a nice toasted flavor that is subtle but noticed. The burst of sweet with the golden raisins is extra special in each bite with chickpeas and perfect avocados. Yes! This salad takes center stage for me because it just has so much balance. This Blueberry Peach Summer Salad is so refreshing and delicious. With added mixed greens, avocado, cucumber, red onion, golden raisins and roasted sunflower seeds its a perfect combo to welcome in the much enjoyed summer time foods of plenty. You will definitely want more for the hot summer. Try this with my Peach Champagne Vinaigrette for a light creamy non-dairy topping to blend so well with this fresh fruit and vegetable salad. Enjoy!

  • 1 Chopping board
  • 1 Sharp knife
  • 1 Small frying pan to roast sunflower seeds in
  • 1 Large salad bowl
  • Serving bowls

Ingredients
  

Blueberry Peach Summer Salad

  • 6 cups Mixed Greens or Spinach
  • 1 Organic Peach, cut into slices
  • ½ cup Organic Cucumbers, sliced and cut in half
  • ¼ cup Red Onion, diced large
  • 2 Green Onions, sliced
  • ½ Organic Avocado, cubed into chunks
  • ¼ cup Chickpeas
  • ½ to ⅓ cup Organic Blueberries
  • ¼ cup Golden Raisins
  • 2 Tbsp Roasted Sunflower Seeds

Instructions
 

  • In a large salad bowl put the base of mixed greens or spinach in the bottom of the bowl. Then add the sliced peaches arranged in a circle around the edge of the bowl (like the photo). Then layer each individually the avocado, cucumbers, red onion, green onion, chickpeas, organic blueberries, golden raisins and roasted sunflower seeds.
  • You can buy toasted sunflower seeds or roast them in a frying pan with no oils or fats under medium heat stirring until they start to turn light tan. Take out of pan immediately. Roasted taste the best.
  • Add your favorite light vinaigrette or salad dressing.
  • Serve and enjoy!
